Auxerrois is rarely bottled as a varietal pet nat in Alsace, and Kamm's granite terroir in Dambach-la-Ville gives it a mineral, saline edge that cuts through the variety's natural roundness. Eric Kamm's Auxerrois Pet Nat is made by the ancestral method (méthode ancestrale) from 100% Auxerrois grown on the volcanic granite soils around Dambach-la-Ville, in the Bas-Rhin department of Alsace. The vineyards sit at around 500 meters elevation on the eastern slopes of the Vosges mountains, where light, sandy, decomposed granite forces low yields and drives mineral concentration in the fruit. The wine is bottled before fermentation is complete, trapping natural carbonation without any addition of sugar, yeast, or sulfur dioxide.

In the glass, this is an unfiltered, non-disgorged pet nat with a gentle effervescence. Auxerrois as a variety delivers soft, round fruit — white peach, pear, and citrus peel — with a naturally low-acid, creamy texture. On granite at low yields, that profile sharpens into something more mineral and saline. The result here sits between fresh citrus and orchard fruit, with a lightly yeasty, bready quality from the lees.

Eric Kamm took over the family domaine in 2005 from his father Jean-Louis, converting the 6.5-hectare estate to organic farming and moving toward zero-intervention winemaking. No chemical additives, no temperature control, no fining, no filtration, and no added sulfites at any stage. Fermentation is initiated exclusively by native yeasts from the grape skins.

Serve well chilled alongside tarte flambée, Alsatian charcuterie, or fresh soft cheeses like Munster. It also works well as an aperitif with oysters or smoked trout, where the wine's saline mineral quality bridges the gap. Quiche Lorraine or a simple grilled sole are reliable table pairings.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Eric Kamm

Eric Kamm is based in Dambach-la-Ville, a medieval fortified town roughly halfway between Strasbourg and Colmar in Alsace. The Kamm family has farmed in the area for multiple generations. Eric took over the domaine from his father Jean-Louis in 2005 and immediately redirected the estate toward natural winemaking, converting the vineyards to organic farming and abandoning the conventional approaches of the previous generation.

The estate covers 6.5 hectares of vineyards at around 500 meters elevation on decomposed volcanic granite. Parcels are planted to Pinot Gris, Riesling, Auxerrois, Muscat, Gewurztraminer, and Pinot Noir, including vines within the Grand Cru Frankstein. Eric works with small yields to manage each parcel individually, using no herbicides, synthetic products, or chemical fertilizers.

In the cellar, the approach is zero-additive: no commercial yeasts, no temperature control, no fining, no filtration, and no added sulfur dioxide at any stage. Fermentation begins with native yeasts present on the grape skins. Pet nats like this Auxerrois are bottled before fermentation completes, sealed under crown cap, and released without disgorgement.

Alsace, France

Alsace runs north to south along the eastern slopes of the Vosges mountains in northeastern France, bordered by the Rhine River to the east. The Vosges act as a rain shadow, making Alsace one of the driest wine regions in France, with long, sunny growing seasons that allow aromatic white varieties to ripen fully while retaining acidity. Vineyards are planted on a narrow strip between roughly 175 and 420 meters elevation, with a complex patchwork of soils including granite, sandstone, limestone, and marl.

Dambach-la-Ville, where Eric Kamm farms, sits in the Bas-Rhin and is home to the Frankstein Grand Cru — one of 51 Alsace Grand Crus — whose soil and subsoil are entirely granite. This two-mica granite breaks down into a light, sandy, well-draining surface that limits yields and concentrates minerals in the grapes. The appellation system in Alsace is grape-driven: key varieties are Riesling, Gewurztraminer, Pinot Gris, Muscat, and Pinot Noir, with Auxerrois widely planted but rarely labeled as a standalone varietal wine.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
