Tasting notes

Bright straw-yellow hue and offers aromas of citrus fruits, white flowers, and subtle mineral notes. On the palate, it is crisp and refreshing, with flavors of lemon zest and green apple, balanced by a vibrant acidity and a clean, mineral-driven finish.

BodyFruitTanninAcidity
  • Style: Dry, light-to-medium-bodied alpine white; the high-altitude schist and quartz terroir gives the wine a taut, mineral backbone with crisp natural acidity; the no-wood, no-sulfur approach keeps the palate precise and the aromatics clean; a restrained, site-driven style of Chardonnay with no oak influence or malolactic softening
  • Grapes & terroir: 100% Chardonnay; organically and biodynamically farmed on steep schist, clay, and quartz slopes at 1,970–2,790 feet in Ayent, Valais, Switzerland; southeast-facing; slopes up to 38 degrees; no fertilizers or irrigation; sulfur and copper used only in minimal amounts; lunar calendar observed; herbal teas and goat whey used for vine health
  • Winemaking: Hand-harvested; manual destemming; slow pressing over up to 12 hours in a horizontal press; spontaneous fermentation with indigenous yeasts in stainless steel; two rackings before bottling; no wood, no fining, no filtration, no added sulfur
  • Serving temperature & decanting: Serve at 48–52°F; no decanting needed; the wine benefits from a few minutes in the glass to open up
  • Pairing: Fondue savoyarde (French alpine cheese fondue)
  • Similar to: Unoaked Chablis, Chasselas from Lavaux, high-altitude Chardonnay from Savoie

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Chérouche

Domaine de Chèrouche is the project of Marc Balzan and Andrea Grossmann, two people who came to winemaking from very different starting points and arrived at the same place at the 2007 harvest in Villeneuve, in the canton of Vaud. Marc had started out in hospitality and sommelier work in Geneva before deciding to learn viticulture and winemaking from the ground up. Andrea grew up near Zurich, trained as a teacher, and spent years working in vineyards in Lavaux while painting large-format canvases on the side. When they met during that 2007 harvest, the idea of farming their own vines together took hold quickly.

Marc went on to spend two years at Mythopia, a pioneering natural winery in Valais, before the couple found their first plots in 2010. The name Chèrouche, a local place name translating roughly as "under the bedrock," reflects the character of the land they farm: exposed, extreme, and deeply tied to the schist and quartz subsoil beneath. The estate covers 1.3 hectares across eight plots, all in Ayent on the heights above Sion, with southeast-facing exposures between approximately 1,970 and 2,790 feet. Slopes reach up to 38 degrees and every task — pruning, canopy work, harvest, and bottling — is done by hand, just the two of them, with help from family and friends at harvest.

Farming is organic and biodynamic throughout: no fertilizers, no irrigation, only minimal sulfur and copper when necessary, and a range of herbal teas made from wormwood, nettle, yarrow, dandelion, horsetail, and goat whey applied to support vine health. The lunar calendar guides timing in both the vineyard and cellar. In the cellar, the approach is just as deliberate: indigenous yeast fermentation, stainless steel only, no wood, no fining, no filtration, no added sulfur.

Wine region

Valais, Switzerland

Valais is the largest wine-producing canton in Switzerland, stretching along the upper Rhône Valley from Martigny eastward to Brig, flanked on both sides by some of the highest peaks in the Alps. The valley runs roughly east-west, which means the south-facing slopes on the valley's northern wall receive exceptional sun exposure despite being at Alpine altitudes. This combination of intense solar radiation, very low annual rainfall — among the driest climates in Switzerland — and cold winters defines Valaisan viticulture and makes it distinctly different from any other Swiss wine region.

Vineyards in Valais typically sit between about 1,600 and 2,800 feet in altitude, with the steepest and most prestigious sites clinging to terraced slopes with gradients that routinely exceed 30 degrees. These terraces, built and maintained over centuries, are only workable by hand. The soils vary considerably across the valley: schist, gneiss, granite, limestone, and calcareous moraines from glacial deposits all appear in different subzones, contributing to the diversity of wine styles the region produces.

Valais is home to more than 50 different grape varieties, many of them indigenous. Chasselas, locally called Fendant, is the most widely planted white and has been grown here for centuries. The region's most prized indigenous whites include Petite Arvine — a mineral, citrus-driven variety with remarkable aging potential — and Amigne, a rare, complex white found almost exclusively around the village of Vétroz. Among reds, Pinot Noir and Gamay are widespread, but the truly local varieties Cornalin and Humagne Rouge produce deeply individual, terroir-driven wines that have no equivalent elsewhere.

Ayent, where Domaine de Chèrouche's vineyards are located, sits on the north-facing slope above Sion, the canton's capital, at elevations that push toward the upper limits of viable viticulture in the region.
