Tasting notes

Semi-carbonic maceration on Grenache from a Demeter Biodynamic site gives this wine a crunchy, fresh red-fruit character that lands closer to a Beaujolais-style gamay than a California red blend. The Pinot Noir from Spanish Springs, grown on marine shale just 1.5 miles from the Pacific, adds a saline lift and cranberry snap that keeps the whole thing bright and food-ready. Bottled unfined and unfiltered, it has real texture without any weight.

Weird Parties Red is a 67% Grenache Noir, 33% Pinot Noir blend from two distinct Central Coast vineyards. The Grenache comes from Martian Ranch in Los Alamos, a 20-acre Demeter Certified Biodynamic estate on Alisos Canyon Road farmed on shaley clay loam soils locally called 'moon dust,' with a microclimate that runs 10 degrees cooler than the Santa Ynez Valley and 10 degrees warmer than Santa Maria. The Pinot Noir is sourced from Spanish Springs Vineyard in Arroyo Grande, a SIP Certified Sustainable site located roughly 1.5 miles from the Pacific Ocean in San Luis Obispo County, with soils of marine shale, limestone, and sandstone.

The grapes were hand-harvested on September 19, 2019, then co-fermented with 21 days of semi-carbonic maceration using native yeast. The wine aged for 7 months in neutral French oak and was bottled unfined and unfiltered. No winemaking additions are confirmed beyond what the process implies; this is a low-intervention production from start to finish.

Winemaker Rachel Silkowski DeAscentiis operates out of a shared winery space in Lompoc, CA. She trained under Brian Loring at Loring Wine Company, where she worked as assistant winemaker before launching Say When with her husband Michel DeAscentiis in 2016. The Weird Parties label is Say When's designated experimental line, used to explore techniques outside their core varietal wines.

Works well with charcuterie, soft-ripened cheese, and olives served at room temperature or as a picnic wine slightly chilled. The bright acidity and light tannin structure make it a good match for herb-roasted chicken or a salmon fillet. Avoid heavy, rich braises that would overpower the wine's delicate frame.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Returns Policy

Producer profile

Say When

Say When was founded in 2016 by Rachel Silkowski DeAscentiis and Michel DeAscentiis, based in Lompoc, California. Rachel studied agricultural business at Oregon State University and interned at Loring Wine Company during summers, eventually becoming assistant winemaker there under Brian Loring. In 2013, she produced her first barrel of Pinot Noir as a side project. Michel, previously a creative director, joined the operation and handles branding and business development.

Say When sources grapes exclusively from small, organically, biodynamically, and sustainably farmed vineyards on California's Central Coast, including sites in Santa Barbara County and Paso Robles. Rachel makes all wines herself in a shared winery space in Lompoc. The Weird Parties label is their experimental line, created to test techniques and blends outside their standard varietal program.

Winemaking across the Say When portfolio follows low-intervention protocols: native yeast fermentation, minimal additions, aging in neutral French oak, and bottling unfined and unfiltered. For the 2019 Weird Parties Red, 21 days of semi-carbonic maceration was used, a technique that extracts color and fruit character while leaving tannins soft and structure light.

Wine region

Central Coast, USA

California's Central Coast stretches from San Francisco Bay south to Santa Barbara County, encompassing a range of appellations shaped primarily by Pacific Ocean influence. Cold upwelling currents along the coast push marine fog and afternoon winds inland through transverse mountain gaps, cooling vineyards significantly and extending growing seasons. This allows grapes to ripen slowly while retaining natural acidity, an important distinction from warmer inland California growing zones.

The two source vineyards in this wine sit within different sub-regions. Martian Ranch is in the Alisos Canyon AVA in Santa Barbara County, an appellation located between the Santa Maria and Santa Ynez Valleys with sandy, shaley clay loam soils and strong diurnal temperature swings. Spanish Springs Vineyard sits within the Arroyo Grande Valley in San Luis Obispo County, a cold coastal site less than two miles from the Pacific Ocean, where marine influence is pronounced and soils include marine shale, limestone, and sandstone. Both sites are suited to lower-alcohol, higher-acid red wines.
