Ruche is one of the rarest grapes grown in California, planted here in three rows at the Calleri Vineyard in Tres Pinos from Randall Grahm cuttings. The 17-day native yeast skin fermentation pulls out the grape's signature rose petal and raspberry aromatics alongside a firm, grippy tannic structure that keeps it from being just a pretty floral wine.

The 2020 Resist Ruche is a 100% Ruche sourced from three rows of vines at the Calleri Vineyard in Tres Pinos, San Benito County, farmed by John Siletto on gravelly loam soils along Tres Pinos Creek. The Ruche cuttings were originally obtained from Randall Grahm's Popelouchum project nearby in San Benito County. In 2020 the vines produced approximately one ton of fruit, which Quinn Hobbs hand sorted and destemmed before doing a light crush and cold-soaking in a fermentation bin.

Winemaking is minimal by design. The grapes fermented on skins using only native yeast for 17 days until dry, then aged in two barrels. On March 10, 2021, the wine was racked into a blending tank, 30 PPM sulfur was added, and the wine was bottled by hand. It is unfined, unfiltered, and vegan.

Ruche is an aromatic red grape from Castagnole Monferrato in Piedmont, Italy, where it holds DOCG status. DNA analysis confirms it is a crossing of Croatina and Malvasia Aromatica di Parma, which explains its intense floral character alongside a tannic backbone. In San Benito, the variety benefits from cool Pacific breezes funneling through gaps in the Gabilan Range, which preserve acidity and aromatic freshness through a long growing season.

Hollow Wines was founded in 2020 by Quinn Hobbs, who grew up near San Francisco and began volunteering at wineries in the Hollister area before pivoting full-time to winemaking. He produces across more than 15 varietals sourced from organically farmed vineyards, using wild fermentation and adding only minimal sulfur. As of this harvest, production moved to Atelier des Savants Fous in Gilroy.

Ruche's combination of tannin, acidity, and floral spice makes it well suited to charcuterie, aged pecorino, and pasta with tomato-based meat ragu. It also holds up well to mushroom dishes and spiced lamb preparations, where its pepper and berry notes can mirror the flavors on the plate.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Hollow Wines

Hollow Wines was founded in 2020 by Quinn Hobbs, who grew up south of San Francisco in Portola Valley and began volunteering at wineries in the Hollister area and Santa Barbara before committing to winemaking full time. He completed his PhD in Political Science at Pepperdine University during his third vintage. He currently lives in Los Angeles with his partner Alison and daughter Mina.

Hobbs sources from organically farmed, often dry-farmed vineyards across California, with a primary relationship at Siletto Family Vineyards in Tres Pinos, San Benito County. He requires fruit sources to be free of herbicides including Roundup. As of the 2021 harvest, he moved production to Atelier des Savants Fous, a custom crush facility in Gilroy run by Tim Slater of Sarah's Vineyard.

Hobbs practices minimal intervention winemaking across more than 15 varietals: native yeast fermentation, no fining or filtration, and only small additions of sulfur. For the Resist Ruche 2020, he hand sorted and destemmed the fruit, did a light crush, cold-stored the fermentation bin, and allowed a 17-day native yeast skin fermentation before hand bottling with 30 PPM sulfur added.

San Benito, USA

San Benito AVA sits in San Benito County within California's broader Central Coast AVA, located along and near the San Benito River approximately two miles south of Hollister. The region is landlocked and moderated by Pacific breezes that flow through gaps in the Gabilan Range, keeping temperatures moderate despite the inland position. The county sits along the San Andreas Fault, which creates significant variation in soil type across the area, including gravelly loams, limestone, granite, and sandstone.

The San Benito AVA was established in 1987 and encompasses approximately 45,000 acres, of which roughly 3,000 are under vine. It contains the nested AVAs of Cienega Valley, Lime Kiln Valley, and Paicines. Pinot Noir and Chardonnay are the most widely planted varieties by acreage, though the region is increasingly associated with rare Italian and Rhone varieties, particularly from sites like Siletto Family Vineyards in Tres Pinos, which farms more than 40 varietals on certified organic gravelly loam soils along Tres Pinos Creek.
