Tasting notes

This is one of the most unusual things you can put in a glass: a lightly sparkling, sub-7% piquette built around Flora, a UC Davis-bred grape so rare it barely exists in California anymore. The fermentation produces a lactic, almost-sour-beer quality that cuts through in the best way, finishing with a floral lift and a honey-tinged sparkle from the Bay Area honey added at bottling.

  • Style: Low-alcohol sparkling piquette; lactic and lightly effervescent; Cinsault, Grenache, and rare California-bred Flora; zero sulfur
  • Grapes & Terroir: Cinsault, Grenache, Flora; organically farmed; Flora from Yorkville, Mendocino County
  • Winemaking: Pomace rehydrated with water, refermented, re-pressed; Bay Area honey added pre-bottling for gentle sparkle; unfiltered; zero additives, zero sulfur
  • Serving: Serve very cold (42-46F); drink young; no decanting needed
  • Pairing: Oysters, grilled sardines, fresh chevre, radishes, spicy Thai or Korean dishes
  • Similar To: For fans of pet-nat, sour beer, or kombucha who want something from the wine world at lower alcohol

Piquette is made by rehydrating pressed grape pomace with water, allowing it to ferment for a few more days, then pressing again. The result is a low-alcohol, lightly sparkling beverage with a different character than the primary wine — more lactic and prickly, with a texture closer to a wild sour beer than conventional wine. Artemis Botanical borrows the term "second flush" from tea cultivation to describe piquette made from later-ripening, end-of-season fruit: Cinsault, Grenache, and Flora.

Flora is a California original, bred in 1938 by UC Davis viticulturist Dr. Harold Olmo as a cross of Semillon and Gewurztraminer, and not released commercially until 1958. It produces wines with subtle aromatics, a soft texture, and flavors that lean toward lemon and honey rather than the overt spice of its Gewurztraminer parent. Artemis sources the Flora from Yorkville in Mendocino County. There is very little of it left planted in California.

Just before bottling, a small quantity of Bay Area honey is added to give the remaining yeasts enough sugar to generate a gentle sparkle in bottle. The wine is unfiltered and bottled quickly to preserve its liveliness. No sulfur or other additives are used at any stage. All fruit is organically grown.

Serve well-chilled alongside oysters, grilled sardines, or a spread of fresh cheeses and radishes. Its low alcohol and lactic edge also make it a natural match for spicy dishes like Thai larb or Korean pajeon, where a fuller wine would clash.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Artemis Botanical

Artemis Botanical is a Northern California producer focused on natural wines, vermouth, amaro, grappa, and piquette. The project operates as what its founder describes as a laboratory for wine, alcohol, and plants in all of their possible combinations. Fruit comes from organically farmed vineyards across Northern California, with sources varying by vintage depending on availability and grower relationships.

The producer's guiding principles are organic agriculture and a hands-off approach in the cellar. All wines are fermented spontaneously with native yeasts and produced without any additives, including sulfur — a zero-zero approach applied across the entire range.

The piquette program uses the second-press method: grapes are pressed for the primary wine, the pomace is rehydrated with water, refermented for a few additional days, then pressed again. A small quantity of Bay Area honey is added just before bottling to generate a gentle in-bottle sparkle. The wines are unfiltered and bottled quickly to retain freshness and carbonation.

Wine region

California, USA

Artemis Botanical sources fruit from across Northern California, drawing on organically farmed vineyards in counties including Mendocino, Solano, San Joaquin, and Contra Costa. The diversity of sources reflects the producer's project-based approach: each wine is built around what specific growers have available in a given season, rather than a fixed appellation identity.

Yorkville, in the Anderson Valley foothills of Mendocino County, is where the Flora for this piquette is grown. The area sits inland from the coast, with warm days and cool nights that favor aromatic white varieties. Mendocino County as a whole has a strong concentration of organic and biodynamic farming relative to the rest of California, making it a reliable source for producers committed to additive-free winemaking.
