This is one of the more technically demanding styles in natural wine: a second-press piquette that still manages to deliver distinct character — orange blossom, guava, white peach, and a saline finish — from Demeter-certified Grenache Blanc grown at Martian Ranch. At well under 7% ABV with no added sulfur and a light effervescence from 6 months of in-bottle conditioning, it occupies a genuinely different register from any conventional sparkling white.

Over Easy Piquette is made from the Grenache Blanc pomace left over after carbonic maceration for Say When's skin-contact white. The spent skins were rehydrated for 3 days and punched down daily, then pressed a second time. A portion of fresh Grenache Blanc juice was added to restart native fermentation. The wine was bottled at 1 Brix and disgorged after 6 months in bottle with no sulfur added at any stage.

The grapes come from Martian Ranch, a 20-acre Demeter-certified biodynamic estate on Alisos Canyon Road near Los Alamos in Santa Barbara County. Martian Ranch was purchased in 2006, planted in 2008 under the guidance of biodynamic consultant Philippe Armenier, and received full Demeter certification in 2014. The Grenache Blanc block is planted to clone 141 on 101-14 rootstock. Soils at Martian Ranch are primarily Paso Robles Formation: a gravelly, shale-pebble matrix with sand and clay, offering excellent drainage and moderate vine vigor.

Piquette is a low-alcohol beverage made from the second pressing of pomace. It is lighter than conventional wine both in alcohol and body, with a natural light effervescence from in-bottle conditioning. The result here is a hazy, pale straw wine with fine, fleeting bubbles. Aromas lean toward orange blossom and guava, with a palate of white peach, mango, and a faint salinity. It drinks more like a sparkling wine spritzer than a still white, and finishes clean and dry.

Say When produces all wines at a shared winery in Lompoc, California. As of 2020, all their vineyard sources are farmed using organic, biodynamic, or regenerative organic practices. Every wine undergoes native fermentation with no commercial yeasts, nutrients, or additives beyond occasional sulfur use — which is absent entirely in this bottling.

Serve very cold alongside raw oysters, steamed clams, or a simple ceviche — the salinity in the wine mirrors brine in shellfish. It also works well as an aperitif with lightly salted chips, fried artichokes, or a cucumber and herb salad. The low alcohol and slight spritz make it a natural match for spicy foods like Thai papaya salad or Vietnamese summer rolls.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Say When

Say When was founded by Rachel Silkowski DeAscentiis and Michel DeAscentiis. Rachel began her career as an intern at Loring Wine Company in Lompoc while studying agricultural business management at Oregon State University, eventually becoming assistant winemaker there. She produced her first personal barrel of Pinot Noir in 2013, and the label officially launched as a commercial operation in 2016. Michel, formerly a creative director, joined harvest from 2014 onward and handles branding and business decisions alongside Rachel.

The winery operates out of a shared production facility in Lompoc, California. Rachel handles all physical winemaking; all fruit and winemaking decisions are made jointly. As of 2020, every vineyard source Say When works with is farmed using organic, biodynamic, or regenerative organic practices. They source from small, family-owned farms across Santa Barbara County and Paso Robles.

Say When uses native fermentation exclusively — no commercial yeasts, no nutrients, no fining agents. Sulfur is used sparingly as a preservative on some wines; Over Easy Piquette contains no added sulfur. The Weird Parties sub-label, under which experimental wines like this piquette are released, was created specifically to push the winemaking into new directions.

Alisos Canyon AVA is Santa Barbara County's seventh and newest appellation, officially established on September 24, 2020. It runs along Alisos Canyon Road, an east-west corridor approximately 3 miles south of Los Alamos off Highway 101, positioned between the Santa Maria Valley AVA to the north and the Santa Ynez Valley AVA to the south. The AVA covers 5,774 acres with roughly 238 acres under vine across nine vineyards, and Martian Ranch is the only bonded winery within the AVA boundaries. Elevations range from 673 to 1,412 feet (205 to 430 meters).

The climate is shaped by cool marine air funneled inland through the San Antonio Creek drainage basin, roughly 25 miles from the Pacific Ocean. This produces significant diurnal temperature swings and positions Alisos Canyon in what petitioners called the 'Goldilocks Rhone Zone' — warmer than the fog-heavy coastal AVAs to the west but cooler than the inland appellations to the east and south. Soils are predominantly Paso Robles Formation (gravelly shale pebbles in a sandy-clay matrix) and Careaga Sandstone (fine-grained sandstone with marine shell fragments), both well-draining and moderately low in vigor. Syrah, Grenache, Grenache Blanc, and Viognier are the leading varieties.
