Let's Get Fizzical is a sparkling white blend from winemaker Brent Mayeaux of Stagiaire Wine, operating out of Treasure Island in San Francisco Bay. The 2021 edition is equal parts Sauvignon Blanc, Chardonnay, and Vermentino. The Sauvignon Blanc — potentially among the oldest plantings of the variety in North America, dating to 1942 — and Chardonnay planted in 1946-47 both come from the historic Lolonis Vineyard in Redwood Valley, Mendocino County. The vines are head-trained, dry-farmed, and certified organic by CCOF, growing in red clay soils strewn with fist-sized rocks at approximately 850 feet elevation.

The Vermentino comes from a steep, north-facing vineyard on the shore of Clear Lake in Lake County, also organically farmed. Clear Lake sits at around 1,300 feet elevation, and the lake's thermal mass moderates temperatures, extending hang time and preserving acidity. The north-facing aspect keeps this block cooler still, which suits the aromatic, salinity-driven character Vermentino can express at altitude.

The wine is bottled at approximately 1 brix with active fermentation still ongoing, then aged on the lees in bottle for nearly 11 months before disgorging. No sulfur is added at any stage. The result is a delicate, fine-bubbled sparkling wine with a slight kiss of reduction on opening, bright tropical fruit, and a trace of residual sugar. Brent Mayeaux operates on a zero-zero philosophy: nothing added, nothing removed.

The light effervescence and saline-tropical profile work well with raw oysters, briny clams, or ceviche. The trace of residual sugar and bright acidity also balance spicy dishes — try it with Vietnamese spring rolls or Thai green curry. Soft fresh cheeses like burrata or fresh goat cheese are natural partners.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Stagiaire Wine

Stagiaire Wine is the project of Brent Mayeaux, a New Orleans native who transitioned into winemaking after working under conventionally minded producers in California. He took his name from the French word for apprentice, which is what he was called during his time working with Philippe Bornard in the Jura and with Gareth Belton of Gentle Folk in the Adelaide Hills, Australia. Those experiences turned his focus toward natural wine and minimal intervention.

Mayeaux returned to California in 2018 and initially attempted to farm his own vines, an approach that proved logistically difficult and costly in Northern California. By 2021 he shifted to sourcing négociant fruit from high-quality, organically farmed sites, which he describes as a more manageable approach that allows more attention in the cellar. He now operates from a shared winemaking space on Treasure Island in San Francisco Bay.

Mayeaux works on a zero-zero basis: no sulfur additions, no fining, no filtration, and no other cellar interventions. For Let's Get Fizzical, the wine is bottled during active fermentation at approximately 1 brix and aged sur latte — on its side, on the lees — in bottle for nearly 11 months before disgorgement. The entire production draws from organically certified vineyard sources.

Redwood Valley is an upland AVA in Mendocino County, California, sitting roughly 200 feet higher in elevation than the surrounding Ukiah Valley floor. A gap in the coastal ridge allows cool Pacific air currents to push into the valley, producing lower growing-season temperatures, higher natural acidity in the fruit, and later harvest dates than neighboring inland appellations. Soils are notably red — iron-rich clay with variable gravel and rock content — and drain well on the hillside benches where old-vine blocks like Lolonis are planted. Mendocino County leads California in certified organic vineyard acreage, with approximately 25 percent of planted land CCOF-certified.

Lake County lies northeast of Napa and east of Mendocino, within California's larger North Coast AVA. Clear Lake, the largest natural freshwater lake entirely within California, sits at approximately 1,300 feet elevation and exerts a moderating influence on surrounding vineyard temperatures, extending the growing season and preserving acidity. Surrounding soils reflect the county's volcanic history, with Mt. Konocti, a dormant volcano, dominating the western shore. High elevation increases UV exposure relative to sea-level valleys, promoting thicker grape skins and concentrated flavors. Sauvignon Blanc performs particularly well in the Clear Lake AVA, and Vermentino planted on steep slopes near the lake benefits from the north-facing aspect and altitude.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
