Jvstitia is a skin-contact white wine made from 100% Greco di Tufo grown at Siletto Family Vineyards in Tres Pinos, San Benito County, California. The fruit comes from one of San Benito's most sought-after organic sources: a 125-acre multi-block property farmed along Tres Pinos Creek in earthquake-shaken gravelly loam soils, situated about 30 miles east of Monterey Bay. Quinn Hobbs sources exclusively from vineyards that use no herbicides.

Hobbs fermented this wine with native yeast and gave it approximately one day of skin contact, pressing at the precise moment to preserve high acidity without over-extracting tannin or risking volatile acidity. The wine was bottled unfined and unfiltered. The TTB does not recognize Greco di Tufo as a U.S. varietal, so the wine is officially labeled as white wine. Analytically, it registers at 3.01 pH with 9.8 grams per liter of total acidity.

Greco di Tufo is a late-ripening, high-acid variety most closely associated with the volcanic hills of Avellino, Campania. In its Italian homeland the grape produces wines with citrus, stone fruit, and mineral character. Grown in San Benito's calcareous gravelly loam soils and handled with a brief maceration, this California expression retains the variety's inherent briskness while adding a faint tannic grip and amber tint from skin contact. Hobbs makes his wines at Atelier des Savants Fous, a custom crush facility in Gilroy.

The sharp acidity and light phenolic grip make this a natural match for grilled oily fish like sardines or mackerel, fried calamari, or lemon-dressed raw shellfish. It also works well with soft-rind cheeses or dishes with a preserved lemon component. Serve cold at around 48-52F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Hollow Wines

Quinn Hobbs, who goes by Dr. Quinn Hobbs after completing his Ph.D. in Political Science at Pepperdine University, founded Hollow Wines in the Central Coast of California. He grew up in Portola Valley south of San Francisco and began learning winemaking by volunteering at wineries in the Hollister area and in Santa Barbara. He also traveled to Western Australia to study natural winemaking with Side Project Wines before launching his own label.

Hobbs sources exclusively from organic and dry-farmed vineyards, rejecting any grower who uses Roundup or synthetic herbicides. His primary source is Siletto Family Vineyards in Tres Pinos, San Benito County, a certified sustainable, organically farmed property. He hand-sorts and hand-shovels his grapes and operates as a one-person production.

Hobbs works from the Atelier des Savants Fous custom crush facility in Gilroy, run by winemaker Tim Slater of Sarah's Vineyard. His approach uses native yeast, minimal additions, and occasional small amounts of sulfur only. For his skin-contact wines he monitors punch-down timing closely and presses before over-extraction occurs, targeting high acid retention and avoiding excess tannin or volatile acidity.

San Benito County sits in California's Central Coast, roughly 30 miles east of Monterey Bay. The Siletto Family Vineyards are located near Tres Pinos along the San Benito River and Tres Pinos Creek, where soils are earthquake-shaken gravelly loam with calcareous, limestone-rich compositions. Cool mornings are followed by warm afternoons, with temperatures dropping quickly in the evening due to the eastern shadow of the Gabilan mountain range. The Siletto properties carry certified sustainable status from the California Sustainable Winegrowing Alliance and have eliminated all herbicide use.

San Benito was historically one of California's earliest commercial wine regions, largely obscured by the footprint of the Almaden Winery. The Siletto family now farms over 172 acres across six sites totaling around 40 varietals, including a range of Italian varieties such as Greco di Tufo, Falanghina, Sagrantino, and Ruché. The San Benito AVA sits within the broader Central Coast AVA. Greco di Tufo is not a TTB-recognized American varietal, so wines made from it must be labeled generically as white wine regardless of production method.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
