Jus Jus: Night is a blend of 80% organic Chardonnay from Hawkeye Ranch in Redwood Valley, Mendocino County, and 20% organic Muscat Blanc from the Cecchini property shared with First Generation Farmers in Contra Costa County. Hawkeye Ranch sits at 722 feet elevation in the upper Russian River drainage, with gravelly loam soils and a diurnal temperature swing of up to 50 degrees. The Contra Costa Muscat comes from a regenerative, organically farmed site on sandy clay soils near the Sacramento Delta.

Fermented in the style of a Pét-Nat using only wild, native yeast, Jus Jus: Night reaches just 7% ABV, roughly half the alcohol of a standard sparkling wine. Fermentation is stopped by filtration, an unconventional step that preserves the wine's low-alcohol character. No sulfites or preservatives are added at any point.

Jus Jus is a collaboration between natural winemaker Martha Stoumen and writer Julia Sherman of Salad for President. It occupies a category of its own: once fermented, it is no longer technically verjus, but at 7% ABV it falls well outside the range of conventional wine. Stoumen works out of shared facilities in Sebastopol where native yeast fermentation is a house requirement. Night is slightly drier and higher in alcohol than its counterpart, Jus Jus: Day (3.5% ABV).

Serve well chilled on its own or over ice as a spritz. It works as a base with Aperol, Lillet, or Cocchi Americano.

Julia Sherman, who co-created this wine, pairs it with thinly sliced raw scallops dressed with Meyer lemon and flaky sea salt. The high acidity also works well with delicate fried foods, fresh cheeses, and light seafood crudo. It holds its own as an aperitif alongside aged Parmigiano-Reggiano and fresh California dates.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Jus Jus

Jus Jus is a collaboration between Martha Stoumen, a Sonoma County-based natural winemaker, and Julia Sherman, the writer and artist behind the food and culture platform Salad for President. The project originated in 2017 when Sherman encountered a bottle of accidentally fermented verjus at Scribe Winery and became interested in producing something similar intentionally. She reached out to Stoumen, who had built a following in natural wine circles through her Martha Stoumen Wines label.

Stoumen studied winemaking at UC Davis and completed a series of apprenticeships after early experience in Tuscany. She works out of shared facilities in Sebastopol alongside producers including Pax Mahle Wines, where native yeast fermentation is required of all tenants. For Jus Jus, she sources organically farmed Chardonnay from Hawkeye Ranch in Redwood Valley, a vineyard she also works with for her Martha Stoumen Wines label, and Muscat Blanc from the Cecchini property in Contra Costa County, which shares land with First Generation Farmers.

Jus Jus: Night is fermented in the style of a Pét-Nat using only wild yeast, with fermentation halted through filtration to hold the final ABV at 7%. No sulfites or preservatives are added. The result sits in a regulatory gray area: it has undergone fermentation, making it distinct from traditional unfermented verjus, but its alcohol level falls far below the threshold for what is classified as wine.

Hawkeye Ranch sits in Redwood Valley, a sub-appellation of Mendocino County located in the upper reaches of the Russian River drainage at 722 feet elevation. The vineyard's Pinole Gravelly Loam soils provide excellent drainage and naturally limit vine vigor. Warm days and cool nights produce a diurnal temperature swing of up to 50 degrees, a key factor in maintaining acidity and freshness in the Chardonnay fruit. Redwood Valley is one of the northernmost appellations in California's North Coast wine country.

The Muscat Blanc in Jus Jus: Night comes from Contra Costa County, on the eastern edge of the San Francisco Bay Area near the Sacramento Delta. The site shares property with First Generation Farmers, an organic community farm and farm education campus founded in 2013 in Knightsen on the Cecchini family's century-old agricultural land. The area's sandy clay soils and warm, windy inland climate are better known for old-vine Zinfandel and Mourvedre, but also support aromatic white varieties grown with organic practices.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
