Jus Jus: Day is a lightly fermented sparkling verjus made from organic Chardonnay sourced from Hawkeye Ranch in Redwood Valley, Mendocino County, and organic Muscat Blanc from First Generation Farmers in Contra Costa, CA. Fermented in the pét-nat style using only wild yeast, it reaches just 3.5% ABV — roughly one-third the alcohol of a typical sparkling wine. No sulfites or preservatives are added at any stage.

The project is a collaboration between Julia Sherman, creator of Salad for President, and Martha Stoumen, a Sebastopol-based natural winemaker who founded her own label in 2014 after eight years of apprenticeships in Tuscany, the Mosel, and Sicily, followed by a Master's in Viticulture and Enology at UC Davis. Fermentation takes place at a shared facility in Sebastopol where native yeast is the standard for all producers under that roof.

Hawkeye Ranch sits at 722 feet elevation in the upper Russian River drainage of Mendocino County. The vineyard is certified organic, Fish Friendly Farming Certified, and dry-farmed on Pinole Gravelly Loam soils. The Chardonnay vines are the rare Martini clone, planted in the 1970s. Redwood Valley's large diurnal temperature swings — often 50 degrees between day and night — preserve acidity in the fruit, making it well suited to this style.

Verjus is juice pressed from unripe grapes early in the growing season, traditionally used in French cooking as a substitute for lemon or vinegar. Jus Jus takes that base juice and lightly ferments it with wild yeast, trapping CO2 in the bottle to create fine, champagne-like bubbles. The result sits in a category of its own: no longer straight verjus, but not classifiable as wine in any conventional sense either.

Serve well chilled as an aperitif alongside oysters, fresh chevre, or cured fish. Its sharp acidity and low sweetness make it a natural fit for vinaigrette-dressed salads and raw vegetable preparations where a traditional sparkling wine would be overpowered. It also works well as a low-alcohol base for a spritz with Aperol or Lillet.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Jus Jus

Jus Jus is a collaboration between Julia Sherman, the writer and artist behind Salad for President, and Martha Stoumen, who founded Martha Stoumen Wines in 2014 in Sebastopol, California. Sherman encountered an accidentally fermented bottle of verjus at Scribe Winery in 2017 and set out to intentionally recreate that effervescent, low-alcohol experience. Through mutual connections, she reached Martha Stoumen, and the two met in a parking lot in Sebastopol before driving north to Ukiah to hand-pick the first batch of grapes together.

Martha Stoumen grew up in Sebastopol, Sonoma County. After studying environmental studies and geography at UCLA, she worked on a small farm in Tuscany in 2006 and began a series of apprenticeships in wine regions including the Mosel and Sicily, where she worked with COS. She then completed a Master's degree in Viticulture and Enology at UC Davis before launching her own label. She works with dry-farmed, organically grown fruit from dedicated growers in Mendocino County, Contra Costa County, and Suisun Valley, and also leases and farms two vineyards herself.

Jus Jus: Day is fermented in the pét-nat style using only native yeast, which occurs naturally on grape skins and in the cellar air. Fermentation is halted by filtration before the wine reaches a higher ABV, leaving residual CO2 to create the wine's fine bubbles. No sulfites or preservatives are added at any point. Martha Stoumen has noted that native yeast ferments less aggressively than commercial strains, which is a practical advantage when targeting an ABV as low as 3.5%.

Redwood Valley AVA sits in the upper reaches of the Russian River drainage in Mendocino County, at an elevation approximately 200 feet higher than the surrounding valley floor. The climate is cooler than adjacent Ukiah due to a gap in the coastal ridge that allows Pacific air currents to penetrate inland. Hawkeye Ranch specifically sits at 722 feet elevation and experiences diurnal temperature swings of up to 50 degrees between day and night, which slows ripening and retains acidity in the fruit. Soils at Hawkeye Ranch are Pinole Gravelly Loam, providing excellent drainage and naturally limiting vine vigor.

Redwood Valley AVA was established in 1997 and encompasses approximately 32,000 acres of upland terrain in Mendocino County. The valley's heritage of organic viticulture is deep — Mendocino County as a whole has nearly 25% of its planted acreage certified organic, and was the first GMO-free county in the United States. Contra Costa County, where the Muscat Blanc originates, is a warmer, inland growing area in the San Francisco Bay region, producing aromatic white varieties with ripe, tropical character that complements the tarter Redwood Valley fruit.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
