Giorgio is a pétillant naturel made from 100% Riesling grown at Zabala Vineyard in the Arroyo Seco AVA near Soledad, Monterey County. The vineyard sits on a rocky dried-up riverbed with alluvial soils and pale round river stones — terrain that pushes vines to dig deep and builds natural acidity. Luis Zabala, a 10th-generation California farmer, tends over 1,000 acres first planted in the 1970s. The site was certified organic from 2010 to 2017 (MCCO and CDFA), lost that certification after a post-emergent mealybug treatment in 2017, and has since operated under Lodi Rules certified sustainable practices with all other organic farming intact.

Winemakers Issamu Kamide and Andrew Lardy gave the Riesling 24 hours of skin contact before bottling under crown cap mid-fermentation, trapping CO2 in the bottle in the méthode ancestrale style. No sulfur was added at any point, and the wine was bottled without fining, filtration, or disgorgement — meaning some sediment and yeast lees remain in the bottle. The result is a lightly cloudy, gently sparkling white with the fine mousse typical of pét-nat.

Arroyo Seco is one of the cooler AVAs in Monterey County, funneling cold Pacific air and fog through the Salinas Valley from Monterey Bay. The combination of extreme afternoon winds, a diurnal temperature shift of roughly 30°F, and gravelly sandy loam soils over old riverbed makes it one of California's best addresses for aromatic white varieties. Riesling in this AVA regularly shows high natural acidity and expressive floral aromatics.

The wine's high acidity and fine mousse cut through fatty, rich dishes well. Try it with raw oysters, ceviche, sushi, or spicy Thai larb. It also works alongside aged goat cheese or anything with a squeeze of citrus.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Wonderwerk Co.

Wonderwerk Co. is the project of Issamu Kamide and Andrew Lardy, two high school friends from Virginia who eventually made their way to California. Andrew studied enology at Fresno State and cut his teeth at multiple Central Coast wineries before becoming Head Distiller at Spirit Guild Distillery in downtown Los Angeles. Issamu studied brand management, spent time in Brazil, then moved to Los Angeles for work in consumer packaged goods. He holds a WSET Level 3 certification. The name Wonderwerk comes from a cave in South Africa believed to contain the earliest evidence of human cooking — a million-year-old hearth.

Wonderwerk sources grapes from carefully selected vineyards across California, prioritizing responsibly farmed fruit. The Giorgio Riesling comes from Zabala Vineyard in the Arroyo Seco AVA, a site run by Luis Zabala, a 10th-generation California farmer. The vineyard was certified organic from 2010 to 2017 and currently operates under Lodi Rules certified sustainable practices, with organic methods intact across all other aspects of farming.

Issamu and Andrew work without fining or filtration across their lineup. For the Giorgio Pet-Nat, the Riesling received 24 hours of skin contact, was bottled under crown cap during primary fermentation in the méthode ancestrale style, and received no sulfur additions. The wine was not disgorged, so yeast sediment remains in the bottle.

Arroyo Seco is a cool-climate AVA established in 1983 within Monterey County's Salinas Valley, near the towns of Soledad and Greenfield. Cold Pacific air and fog pour in daily from Monterey Bay through the valley's open north-south corridor, creating strong afternoon winds and a diurnal temperature shift averaging 30°F. That combination slows ripening dramatically, extending one of California's longest growing seasons and locking in natural acidity.

Soils in the eastern portion of the AVA, where Zabala Vineyard sits, are coarse sandy loam and gravel derived from decomposed granite washed down from the Gabilan Mountains, layered over old river-stone alluvium. Large rounded river stones, known locally as 'Greenfield Potatoes,' retain daytime heat and reflect it back at the vines overnight. These well-drained, low-fertility soils stress vines productively. Chardonnay and Pinot Noir dominate plantings, but Riesling and Gewürztraminer thrive here given the long, cool growing season.
