This Chardonnay occupies a genuinely uncommon space: oxidative and reductive at once, with peach and apricot fruit meeting wet stone minerality and a lactic roundness from barrel aging. The split-processing technique, half whole-cluster maceration and half direct press into neutral oak with zero racking, gives it texture without weight.

Wild Arc Farm sources this Chardonnay from Bruynswick Vineyard in the Hudson River Region AVA. The fruit is handled with a split approach: half whole-cluster macerated for 48 hours and half direct pressed, then both portions go into neutral French oak barrels. The wine sees no racking or stirring and is bottled without any additional sulfur beyond 20ppm added at crush.

The result sits between oxidative and reductive poles, which is characteristic of Todd Cavallo's approach with this grape. Extended time in neutral oak produces a textured, mouth-filling white with genuine acidity. Notes of peach, apricot, and a faint tropical undercurrent are grounded by a wet stone mineral quality on the finish.

Wild Arc Farm is a biodynamic, permaculture-focused operation in Pine Bush, New York, run by Todd Cavallo and Crystal Cornish. They moved from Brooklyn in 2016 and work with a mix of estate, contract-farmed, and purchased fruit, prioritizing organic and regenerative management across their sources. Annual production across all their wines, piquettes, and ciders runs around 24,000 bottles.

The textured, slightly oxidative character pairs well with roast chicken, pork rillettes, or any dish that can stand up to some richness. The mineral backbone and acid streak also make it a natural match for fresh shellfish, oysters especially. Aged goat cheese or a washed-rind like Taleggio will complement the lactic quality from barrel aging.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Wild Arc Farm

Todd Cavallo and Crystal Cornish left Brooklyn in summer 2016 after a combined 30 years in the city. They settled on a roughly nine-acre former perennial nursery in Pine Bush, New York, with limited prior agricultural experience. Cavallo had been fermenting beer, pickles, and other products in their apartment before making the move. Within a few years, Wild Arc had become one of the more closely watched natural wine operations in New York State.

Wild Arc Farm operates as a biodynamic, permaculture-focused property. They hold about one acre of estate vines, personally and contract-farm around three additional acres, and purchase fruit from growers across the state, including the Hudson River Region and Finger Lakes. On their own land they apply regenerative organic practices; sourced fruit ranges from organic to conventional, with a stated preference for growers moving toward organic management. The farm includes guild-planted orchards with sea buckthorn, aronia berries, and pollinator-attracting plantings between tree rows.

Cavallo uses native yeast fermentation across his wines and keeps sulfur additions minimal, typically 20ppm at crush and nothing additional at bottling. He works in a converted barn on the farm property. Beyond still wines, Wild Arc produces piquette, cider, kombucha, and a vermouth using botanicals grown on the farm. Annual production across all formats is approximately 24,000 bottles.

Hudson Valley, USA

The Hudson River Region AVA, established in 1982, stretches along the Hudson River south of Albany and is the oldest continually productive wine region in the United States. The river moderates the otherwise continental climate through tidal flow and Atlantic-influenced winds that sweep north up the valley. Pine Bush, where Wild Arc Farm is located, sits in the mid-Hudson Valley near the Shawangunk Ridge, influenced by both the Catskills to the west and the Atlantic to the south.

Soils across the AVA are geologically diverse, shaped by the retreat of the Laurentide Ice Sheet roughly 11,000 years ago. The result is a mix of alluvial deposits, granite and gneiss in the Highlands, and glacial till across the corridor. Wild Arc Farm specifically points to the area's granitic soils as a key factor in the mineral quality of their wines. The region supports both cold-hardy hybrid varieties and vinifera grapes including Chardonnay, Cabernet Franc, and Riesling.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
