Tasting notes

This piquette sits at the intersection of natural wine and craft fermentation: lactic, faintly funky, with the Muscat's floral lift cutting through the sour-beer edge. The Bay Area honey addition before bottling keeps the sparkle soft and the finish clean rather than sharp.

  • Style: Lightly sparkling piquette; unfiltered; lactic and floral; very low alcohol; zero sulfur
  • Grapes & Terroir: Colombard from Solano County, Muscat from San Joaquin County; organically grown fruit
  • Winemaking: Second-press piquette; pomace rehydrated with water; spontaneous fermentation; Bay Area honey added pre-bottling for sparkle; bottled unfiltered, no sulfur
  • Serving: Serve well-chilled, 38-45F; no decanting needed; crown cap or cork
  • Pairing: Oysters, radishes with butter and salt, fresh chevre, Southeast Asian dishes with citrus and herbs
  • Similar To: For fans of natural petillant, farmhouse ale, or low-intervention sparkling wine who want something genuinely different

Piquette is made by adding water to pressed grape pomace and fermenting the resulting liquid a second time. Here, Colombard from Solano County and Muscat from San Joaquin County were pressed, then the pomace was rehydrated and pressed again a few days later. The result is a lighter, lower-alcohol beverage with a distinctly different character from the wine made in the first pressing.

The term "first flush" is borrowed from tea cultivation, where it refers to the earliest harvest of the season. The lower alcohol and lower acid environment of piquette creates a more challenging fermentation, one that trends lactic and takes on an almost sour-beer quality. The Colombard contributes tension and freshness; the Muscat adds powerful floral aromatics.

Just before bottling, a small quantity of Bay Area honey was added to give the yeasts enough sugar to generate a gentle sparkle. The wine was bottled quickly and without filtration to preserve its liveliness. No sulfur or additives of any kind were used. Alcohol typically falls in the 4-9% ABV range for piquette.

Works well alongside salty, acidic, or lightly fermented foods: oysters, radishes with butter and sea salt, or a simple green salad with vinaigrette. The floral Muscat component pairs well with Southeast Asian dishes that lean on citrus and fresh herbs. Also a strong match for fresh chevre or any soft, young cheese.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

Producer profile

C.O.E. + Artemis Botanical

Artemis Botanical is a small California producer operating out of the Bay Area, making natural wines, vermouth, amaro, piquette, and spirits. The C.O.E. label — standing for Conspiracy of Equals — is named after Gracchus Babeuf, the 18th-century French revolutionary who attempted to overthrow the post-Revolutionary government and was executed in 1797. The project began as a way to apply natural wine principles to aromatized wines and spirits, and has since expanded into a broader range of fermented beverages.

Artemis Botanical sources organically grown fruit from across Northern California and ferments spontaneously with native yeast. No additives, including sulfur, are used at any stage. The approach is described as zero-zero. The winery works with a range of aromatic varieties and emphasizes skin contact for whites and minimal extraction for reds.

The First Flush piquette is made by pressing Colombard and Muscat, then rehydrating the pomace with water and pressing again. Fermentation proceeds spontaneously in a lower-alcohol, lower-acid environment that encourages lactic character. Bay Area honey is added just before bottling to create a gentle in-bottle sparkle. The wine is bottled unfiltered and without sulfur.

Wine region

California, USA

Solano County sits in California's North Coast AVA, halfway between San Francisco and Sacramento. Its climate is shaped by maritime influences from Suisun Bay and San Pablo Bay, which drive fog and cooling winds inland, moderating temperatures and extending the growing season. Vineyards are concentrated in the western part of the county, in the foothills of the Vaca Mountains, where shallower sandstone and shale soils limit vine vigor and concentrate fruit. The county's two primary sub-AVAs are Suisun Valley and Solano County Green Valley.

San Joaquin County sits in California's Central Valley and has a warmer, drier growing climate than Solano County. It is a major source of high-volume fruit, including Muscat, which thrives in its heat. Colombard, known in the US as French Colombard, is a cross of Chenin Blanc and Gouais Blanc and is widely planted across California's Central Valley and North Coast for its high acidity and neutral flavor profile. Muscat contributes pronounced floral and aromatic character, which carries through even in a second-press piquette.
