Juhfark is one of the most site-specific grapes in Europe — grown almost nowhere outside Somló — and here it delivers its signature salty, flinty minerality cut with lemon and green apple, softened by the floral, stone-fruit character of Hárslevelű. At 10.5% ABV with fine ancestral-method bubbles, it is high-acid and weightless, closer to a great pét-nat than anything else on the market from this appellation.

Foam Somló Pet Nat is made from Hárslevelű and Juhfark grown on the volcanic slopes of Somló Hill in northwestern Hungary's Veszprém County. Meinklang holds a parcel here — reclaimed by the Michlits family after the fall of communism — planted with vines between 35 and 60 years old on volcanic soil with basalt bedrock, a thin layer of loess, and black nyirok. The wine is produced via the ancestral method: spontaneous fermentation begins in stainless steel with indigenous yeasts, then the wine is bottled before fermentation completes, finishing in bottle. It is unfined, unfiltered, and sealed under crown cap with low added sulfites.

Juhfark is an ancient Hungarian variety grown almost exclusively on Somló and is known for its high, sometimes piercing acidity and strong ability to reflect volcanic terroir. Hárslevelű contributes floral aromatics and rounder stone fruit character, balancing Juhfark's sharp mineral edge. Together, the two varieties produce a wine that is citrus-driven and mineral, with a restrained fruitiness typical of the appellation. At around 10.5% ABV, this is a low-alcohol, high-freshness pet nat built for drinking cold.

Somló Hill is an extinct volcano rising 432 meters from the flat Pannonian plain north of Lake Balaton. Vineyards occupy steep slopes between 220 and 260 meters elevation. The black basalt bedrock retains daytime heat and radiates it back at night, a key factor in ripening on this relatively cool hill. Low humidity from constant breezes reduces disease pressure, enabling organic and biodynamic viticulture. Wines from this appellation are known for salty, flinty minerality and high acidity with smoky and stony character.

Meinklang is Demeter-certified biodynamic. Their main estate sits in Pamhagen, Burgenland, within the UNESCO World Heritage Site of National Park Neusiedlersee. The Somló parcel is farmed with the same biodynamic principles: on-farm compost from sheep, cow, and horse manure; cover crops of wild herbs and grasses; no synthetic inputs. Winemaking is minimal intervention throughout — no fining, no filtration, low added SO2.

The high acidity and light body make this a natural match for raw oysters, ceviche, or any dish with brine and citrus. It works equally well with poultry dishes finished with sour cream — a classic Hungarian pairing for Juhfark — or with fresh goat cheese and spring vegetables. Serve well-chilled as an aperitif; the bubbles and low alcohol make it easy to open before dinner has even started.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Meinklang

Meinklang is operated by the Michlits family in Pamhagen, Burgenland, Austria, situated within the UNESCO World Heritage Site of National Park Neusiedlersee. The family has farmed this land since before World War I, when the region still belonged to Hungary. After the war, their village ended up across the border in Austria, and a parcel in Somló was surrendered. Parents Anneliese and Werner reclaimed the Hungarian plot after the fall of communism in 1989, during Hungary's privatization period, when farmland became available for purchase. The three Michlits sons — Werner, Hannes, and Lukas — each manage distinct areas of the farm alongside their parents. What began as a 60-hectare organic operation in the late 1980s has grown to approximately 2,500 hectares, making Meinklang one of Europe's largest biodynamic farms.

The Meinklang farm is Demeter-certified biodynamic, having achieved certification in 2003 after beginning the transition to biodynamics in 2001. The operation functions as a fully integrated mixed farm: approximately 80 hectares of vineyards run alongside ancient grain cultivation (spelt, farro, einkorn), fruit orchards, vegetable gardens, and a livestock herd including Angus cattle, pigs, sheep, and horses. Fertilizer comes from on-farm compost using manure from these animals, pomace, green waste, and occasional rock dust. Cover crops of sweet clover, vetches, red clover, and wild grasses grow between vine rows, providing habitat for soil organisms and natural competition that concentrates aromas in the grapes.

In the cellar, Meinklang practices strict minimal intervention: spontaneous fermentation with native yeasts, no reverse osmosis, no chaptalization, and bottling without fining or filtration. Vessels include stainless steel, large-format neutral oak, and concrete eggs. The Foam Somló Pet Nat is made via the ancestral method — fermentation begins in tank and finishes in bottle — with low sulfites added at bottling. The Somló parcel is farmed biodynamically in Hungary under the same Demeter principles applied across the Burgenland estate.

Somló is a single extinct volcano rising 432 meters from the flat Pannonian plain in northwestern Hungary's Veszprém County. The hill's summit is capped by the ruins of an 11th-century castle. Vineyards occupy steep slopes between 220 and 260 meters elevation, with exposures ranging from south and southeast to north, creating variation in ripeness across the hill. The broader Nagy-Somló PDO covers 559 hectares when satellite volcanic outcroppings of Ság and Kis-Somló are included. The region produces only white wines.

Somló's soils are defined by basalt bedrock from ancient lava flows, overlaid with volcanic tuff, black nyirok, loess, ferrous clay, and Pannonian sand — the legacy of a prehistoric sea that once covered the area. The black basalt retains daytime heat and radiates it back at night, moderating temperatures on cooler days. Low humidity from constant breezes reduces fungal pressure and makes organic viticulture practical across much of the appellation. The dominant grape varieties are Juhfark — grown almost exclusively on this hill — along with Furmint, Hárslevelű, and Olaszrizling. Somlói wines are known for high acidity, salty and flinty minerality, and smoky, stony character.
