The unpruned Graupert vines produce small, concentrated berries that give this pet nat real grip and texture — ripe quince and spiced orange peel on the nose, rustic tannins on the palate, and a yeasty, cutting finish that makes it behave more like a serious wine than a casual sparkler. At 12% and dry, it has enough structure to hold up to food without losing its wild edge.

Foam White Pet Nat is made from Grauburgunder (Pinot Gris) grown in the Graupert vineyard in Pamhagen, a village on the eastern edge of Neusiedlersee inside the UNESCO World Heritage Site of National Park Neusiedlersee, directly on the Austrian-Hungarian border. The vineyard's defining feature: the vines are left entirely unpruned, free to climb and regulate their own yield, producing smaller, thicker-skinned berries with more concentrated flavors.

The winemaking follows the méthode ancestrale. Grapes undergo skin fermentation for approximately 10 days, then are pressed and bottled while still fermenting, with no additives. Fermentation finishes naturally in the bottle, building gentle effervescence. The wine is unfined and unfiltered, with only 20 mg/L of added sulfites.

The result lands somewhere between a white and a skin-contact wine. Expect ripe yellow fruit, spicy orange zest, a grippy tannic texture from the skin contact, a yeasty dimension, and fine integrated bubbles. Acidity is bright and cutting. This is a wine with structure and attitude, not a simple fizz.

Meinklang holds Demeter biodynamic certification. The estate, run by the Michlits family, farms approximately 80 hectares of vineyards within a 2,500-hectare mixed agricultural operation. Vineyards are fertilized with compost produced on-farm from sheep, cow, and horse manure. No reverse osmosis, no chaptalization, no oak chips are used in the cellar.

The tannic grip and bright acidity make this a natural with charcuterie, aged hard cheeses, and grain-based dishes like spelt risotto or farro salad. It can handle richer preparations — braised pork, roasted root vegetables — without getting lost. Works well as an aperitif with cured meats and pickles.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Meinklang

Meinklang is a Demeter-certified biodynamic mixed farm operated by the Michlits family in Pamhagen, Burgenland, within the UNESCO World Heritage Site of National Park Neusiedlersee. The family began practicing organic agriculture on roughly 60 hectares of farmland in the late 1980s, transitioned to biodynamics in 2001, and achieved Demeter certification in 2003. After the fall of communism opened Hungarian border lands to privatization in 1989, the estate expanded rapidly and now spans approximately 2,500 hectares on both sides of the Austrian-Hungarian border, with 80 hectares under vine.

Werner Michlits manages the vineyards and overall farm operations alongside his wife Angela, who handles winemaking. His brothers Hannes and Lukas oversee grain cultivation and livestock respectively. The farm functions as a closed agricultural system: Angus and Aubrac cattle, sheep, and other animals graze the estate and provide manure composted on-farm with pomace, green waste, and occasional rock dust to fertilize the vineyards. The estate also produces ancient grains such as spelt, farro, and einkorn, as well as fruit and vegetables. The name Meinklang combines the German words for 'my' and 'sound', reflecting the family's orientation toward the land as the origin of the wine.

A signature practice at Meinklang is the Graupert vineyard, where Grauburgunder vines are left completely unpruned, free to grow and climb according to their own metabolism. This results in smaller, thicker-skinned berries and self-regulated yields with more concentrated aromas and extract. In the cellar, all wines ferment spontaneously with indigenous yeasts. Fermentation and aging take place in stainless steel, used oak barrels, or handmade concrete egg-shaped containers. Wines are bottled unfined and unfiltered with zero or minimal sulfur additions.

Neusiedlersee sits on the eastern shore of Lake Neusiedl in Burgenland, Austria's easternmost province, running roughly 50 kilometers north to south along the Hungarian border. The region covers approximately 6,700 hectares of vineyards, with isolated patches around the southern village of Pamhagen — where Meinklang is based. The Pannonian climate brings hot, dry summers averaging around 2,000 hours of sunshine annually, while Lake Neusiedl, the largest steppe lake in Central Europe at just 1.8 meters deep, acts as a thermal reservoir, moderating temperatures overnight and extending the growing season into autumn.

Soils in Neusiedlersee are varied: silty sandy loam rich in quartz dominates the flat Seewinkel and Parndorf Plain, with gravel and loam inclines rising toward the north. The Neusiedlersee DAC designation, established from the 2011 vintage, anchors the region's identity around dry Zweigelt-based reds. Beyond the DAC framework, the region produces exceptional sweet Prädikatswein — Beerenauslese and Trockenbeerenauslese — where autumn mists off the lake encourage noble rot. White varieties including Grauburgunder, Welschriesling, and Grüner Veltliner also thrive here, producing riper, fuller-bodied profiles than in Austria's cooler northern regions.
