This is Melon de Bourgogne doing something it rarely gets to do — sparkling, unfiltered, with zero sulfur and nothing added. The bubbles are firm and persistent, and the palate delivers sharp citrus and a crushed-rock minerality that traces directly to the black schist soils of Saint-Lambert-du-Lattay. It drinks like a snapshot of the vintage and the place.

Decap-Bulles is a pét-nat made from 100% organic Melon de Bourgogne by Vignoble Le Temps d'Aimer, based in Saint-Lambert-du-Lattay in the Anjou sub-region of the Loire Valley. Produced in tiny quantities, it is bottled before fermentation completes, finishing in the bottle under crown cap — the defining method of pétillant naturel. No sulfur is added at any point, and the wine is unfined and unfiltered.

The estate sits on the plateau of Saint-Lambert-du-Lattay in the heart of Anjou Noir, a zone named for its characteristic black schist soils. These metamorphic soils drive firm minerality and linear structure in the wines. The 2.70-hectare domaine includes old vines between 50 and 60 years of age alongside younger plantings of 10 to 25 years. The Melon de Bourgogne used for Decap-Bulles is farmed organically.

In the glass, the wine is crisp and bright with firm bubbles, flavors of citrus and crushed rock, and a saline undercurrent typical of Melon de Bourgogne grown on mineral-rich soils. It is dry, light-bodied, and high in acidity — built for immediate enjoyment. The wine is labeled as Vin de France, outside any AOC designation.

Serve with freshly shucked oysters, steamed mussels, or grilled sardines — the high acidity and saline mineral edge are a natural match for shellfish and briny seafood. It also cuts through fried foods cleanly. A tangy fresh goat cheese works well if you want something off the water.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Le Temps d'Aimer

Vignoble Le Temps d'Aimer is a small domaine run by childhood friends François Maudet and Romain Jos, operating alongside their respective day jobs. The project began around 2011, with the two gaining early vineyard experience working with Loire natural wine producer Jean-Christophe Garnier, through whom they were able to acquire their first vines.

The estate covers 2.70 hectares on the plateau of Saint-Lambert-du-Lattay in Maine-et-Loire, planted on the black schist soils of Anjou Noir. Vines range from 10 to 25 years old on the younger end and 50 to 60 years on the old-vine parcels. Farming is certified organic. Red varieties on the estate include Cabernet Franc, Cabernet Sauvignon, Gamay, and Pineau d'Aunis, with some Chenin Blanc for whites.

Winemaking at Le Temps d'Aimer is low-intervention throughout: native yeast fermentation, no fining, no filtration, and no added sulfites across any of the wines. For Decap-Bulles, fermentation is arrested before completion and the wine is bottled under crown cap to finish as a pétillant naturel. Production quantities are small and the domaine is known to adapt formats — including magnums — based on how a given wine evolves.

The Loire Valley stretches roughly 600 miles across western France from the Massif Central toward the Atlantic coast, divided into three main zones: the Upper Loire (Sancerre, Pouilly-Fumé), the Middle Loire (Touraine, Saumur, Chinon, Vouvray), and the Lower Loire, which encompasses the Muscadet and Anjou sub-regions. The climate across Anjou is oceanic and temperate, with annual rainfall around 600mm and relatively moderate temperature swings due to Atlantic influence.

Saint-Lambert-du-Lattay sits within Anjou Noir, a distinct geological zone named for its black schist and sandstone subsoils derived from metamorphic and sedimentary rock of the Armorican Massif. These soils are dense and fissured, encouraging deep root development and producing wines with firm mineral structure. The area falls within the Coteaux du Layon appellation boundary, though producers working naturally outside AOC specifications often declassify to Vin de France. Melon de Bourgogne, the dominant white grape of the Lower Loire, is the sole variety permitted in Muscadet AOCs and thrives in the region's cool, high-acidity growing conditions.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
