This is what Prosecco looked like before autoclaves took over — bone-dry, hazy, and alive with yeast, ripe pear, and citrus peel rather than the sweet, gassy version sold everywhere else. The lees settled at the bottom add a creamy, bread-dough texture you will not find in any commercially filtered sparkling wine at this price.

Casa Belfi Colfondo Frizzante is a 100% Glera sparkling wine from San Polo di Piave in the province of Treviso, Veneto. The vineyards span gravelly, silty-sand soils along the Piave river plain, trained in Guyot. The estate is certified organic and biodynamic by both Suolo e Salute and Demeter, and all vineyard and cellar work follows the Maria Thun biodynamic calendar.

Colfondo means "with the bottom" — a reference to the lees left in the bottle after secondary fermentation. After harvest, grapes are gently pressed, and the must is clarified by cold decantation. Primary fermentation takes place in stainless steel tanks with indigenous yeasts and no added sulfites. The wine rests on its lees for approximately six months, then is bottled in spring to complete secondary fermentation in the bottle. It is never fined or filtered, leaving residual yeast sediment in every bottle.

The result is a frizzante with delicate, soft mousse — lighter in bubble pressure than a spumante. Straw yellow with green hues and a hazy appearance, it shows aromas of ripe pear, jasmine, citrus peel, and baked bread. On the palate it is bone-dry, bright in acidity, and light-bodied at around 10.5% ABV. Shaking the bottle redistributes the lees and adds a creamier, spicier texture to the wine.

This is the ancient method Prosecco was made before the Charmat (autoclave) process became standard. Casa Belfi, a project founded in 1999 by winemaker Maurizio Donadi and producer Albino Armani, is one of the few estates keeping this style alive in the Treviso flatlands.

Serve with raw or lightly cooked seafood — oysters, clams, grilled prawns — where the high acidity and low alcohol act as a palate cleanser. Works well with soft cheeses, vegetable frittata, and light charcuterie. Pour the first glasses clear for delicate dishes, then gently swirl the bottle to incorporate the lees for richer, creamier courses.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Casa Belfi

Casa Belfi was founded in 1999 as a collaboration between enologist Maurizio Donadi and producer Albino Armani. The winery is located in San Polo di Piave in the province of Treviso, roughly 40 miles north of Venice. The estate covers approximately 9 to 10 hectares of vineyards spread between San Polo and Romanziol di Noventa del Piave, on gravelly soils rich in sand and silt, with Guyot-trained Glera vines.

The vineyards are certified organic by Suolo e Salute and biodynamic by Demeter. No synthetic fertilizers, pesticides, or herbicides are used. Donadi applies biodynamic preparations and works according to the Maria Thun biodynamic calendar for both vineyard and cellar operations. The goal is to support biodiversity and microbial health in the soil.

In the cellar, Donadi works primarily with stainless steel tanks. After cold-settling the must, fermentation proceeds spontaneously with native yeasts and no added sulfites. The wine rests on its lees for around six months, then is bottled in spring before fermentation is fully complete, allowing secondary fermentation to finish in the bottle — the col fondo method. The wine is not fined, not filtered, and contains no chemical additives. Donadi also produces an amphora-aged cuvee for certain bottlings, but the Colfondo Frizzante is the stainless steel expression of this traditional method.

Veneto, Italy

Veneto is Italy's most prolific wine region by volume, producing around 11.9 million hectoliters annually from 97,500 hectares. It stretches from the foothills of the Alps and Dolomites in the north to the Adriatic coast in the east, with Lake Garda moderating the western zones. The climate is broadly continental with alpine and maritime influences, creating a wide range of microclimates. The province of Treviso, where Casa Belfi is based, sits in the northeastern corner of the region along the Piave river plain, with a moderate continental climate and gravelly, silty soils deposited by the river.

Veneto holds 14 DOCGs and 29 DOCs. The broad Prosecco DOC covers nine provinces across Veneto and Friuli Venezia Giulia and produces the majority of Prosecco sold internationally, largely from flat terrain using the Charmat (tank) method. The Conegliano Valdobbiadene Prosecco Superiore DOCG, the historic higher-quality tier, covers steep terraced hillsides between those two towns in Treviso province — a landscape declared a UNESCO World Heritage Site in 2019. Wines produced and bottled entirely within Treviso province may carry the Prosecco DOC Treviso designation. Beyond sparkling wine, Veneto is home to Amarone della Valpolicella, Soave, Bardolino, and a wide range of indigenous varieties including Garganega, Glera, Corvina, and Raboso.
