Bonnet-Ponson Second Nature Pas Dose (Zero Dosage) Champagne is made from grapes grown in Chamery Premier Cru. The blend is 45% Pinot Noir, 40% Chardonnay, and 15% Pinot Meunier. Spontaneous fermentation with native yeasts, no added sulfites. Bonnet-Ponson Second Nature Pas Dose was disgorged on 15 June 2017. This is an excellent grower Champagne made as naturally as possible.
The Producer: Bonnet-Ponson Champagne
Bonnet-Ponson is a Champagne house located in Chamery, France. The estate has been certified organic since 2013 - no synthetic pesticides, herbicides or chemicals fertilizers. At Bonnet-Ponson, rot, a very common phenomenon in Champagn, is fought with natural fungicides - sulfate and copper sulfate - and also with vegetal preparations made at the domaine (nettle maceration, horsetail infusion).
The purpose of this approach is to help the vines fight diseases leveraging their own natural defenses instead of using chemical products. A way to achieve this is by preserving a vibrant and harmonica ecosystem in the vineyards, facilitating the interaction of micro-organisms, plants, and animals interact, according the principles of biodynamic farming.
