Tasting notes

Deep ruby with a dark core and clear rim. The nose is generous and earthy, with dark cherry, blackberry, dried herbs, a touch of vanilla from the oak, and a subtle mineral note from the sandy volcanic soils. On the palate, medium-bodied with firm tannins, bright acidity, and a long, structured finish.

BodyFruitTanninAcidity
  • Style: Dry, medium-bodied structured red with the bright acidity and firm tannins characteristic of cooler mountain-elevation viticulture; the co-fermentation of Tempranillo, Nebbiolo, and Cabernet Sauvignon — an unconventional combination — produces a wine that draws dark fruit from the Cabernet, aromatic grip and red cherry from the Tempranillo, and the floral, high-acid structure of Nebbiolo; the 30-day maceration builds genuine tannic presence without rendering the wine heavy
  • Grapes & terroir: Co-fermented Tempranillo, Nebbiolo, and Cabernet Sauvignon from the Téllez family home vineyard planted in 2004 in Tecate, Baja California Norte; biodynamically farmed on sandy loam soils at approximately 2,400 ft elevation; dry-farmed, head-trained vines; hot, dry Mediterranean-style climate with cool nights and virtually no disease pressure
  • Winemaking: Hand-harvested; destemmed; co-fermented in locally made concrete tinajas; 30-day skin maceration with wild yeast; aged over winter in a mix of stainless steel vats and used French oak barrels; bottled without fining or filtration; 10 ppm added SO2 at bottling only
  • Serving temperature & decanting: Serve at 62–65°F; decant 20–30 minutes
  • Pairing: Birria de res (traditional Mexican slow-braised beef stew, served with consommé)
  • Similar to: Natural Tempranillo from Ribera del Duero in a more rustic style, Nebbiolo from Langhe in a warmer expression, Bichi's own Listán for a sense of the producer's broader terroir-driven red wine approach

Bichi Flama Roja 2022 is a dry red wine co-fermented from Tempranillo, Nebbiolo, and Cabernet Sauvignon grown biodynamically at the Téllez family's home ranch in Tecate, Baja California Norte, Mexico. The family planted these vines themselves in 2004, farming them just as they do their vegetable and herb gardens. Noel Téllez of Bichi hand-harvests the grapes, destems them, and co-ferments in locally made concrete tinajas with 30 days of maceration. Bichi Flama Roja 2022 is then raised over winter in a mix of stainless steel and used French barrels, and bottled without fining or filtration with only 10 ppm of added SO2. 13% ABV.

Birria de res, grilled carne asada, lamb barbacoa, pasta al ragù, roast chicken, wild mushroom tacos, aged Manchego, chorizo, cochinita pibil, smoked brisket.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Bichi

Bichi was founded in 2014 by brothers Noel and Jair Téllez, whose family moved to Baja California from Sonora in the early 1970s and inherited their father's vineyards and ranch in Tecate. Noel was a practicing lawyer before committing full-time to the winery; Jair is a prominent chef who opened the pioneering farm-to-table restaurant Laja in the Guadalupe Valley in 1999, followed by MeroToro and Amaya in Mexico City, where he offered one of the country's first all-natural wine lists. The name Bichi comes from the Sonoran Yaqui word for "naked" — a direct statement of winemaking philosophy.

The turning point came in 2014 when a meeting with Louis-Antoine Luyt — a Burgundy-born, Chile-based natural wine producer known for his work reviving old-vine País there — convinced Noel and Jair to seek out the ancient, nearly forgotten Misión plantings on neighboring farms in Tecate, as Luyt had done in Chile with the same grape under a different name. Luyt collaborated with Bichi from 2014 to 2017, and the project has since continued under Noel's sole ownership with assistance from Beaujolais-trained winemaker Yann Rohel.

The estate farms 10 hectares biodynamically at the Téllez family home ranch in Tecate. The home vineyard — planted by the family in 2004 with Tempranillo, Nebbiolo, and Cabernet Sauvignon, the source of Flama Roja — is farmed with the same care given to the family's vegetable and herb gardens. Ana Montaño oversees the biodynamic conversion of the property. Beyond the home vineyard, Bichi collaborates with organic growers across Tecate and the Valle de Guadalupe, working with Misión vines over a century old, Rosa del Peru (Moscatel Negro), Palomino, Chenin Blanc, and at least one vineyard planted to a grape variety that remains genetically unidentified.

Wine region

Tecate, Mexico

Tecate sits in the mountainous northern section of Baja California Norte, just across the US-Mexico border from the San Diego County town of Tecate, California. It occupies the higher inland reaches of the Ruta del Vino wine corridor that stretches from inland Tecate westward down toward the coast at Ensenada, passing through the Valle de Guadalupe — Baja California's most established wine valley. At elevations approaching 2,400 feet, Tecate's vineyards sit considerably higher than those on the coastal plain, resulting in cooler nights, greater diurnal temperature variation, and a growing season that more closely resembles parts of Southern California or the Mediterranean mountains than the warmer valley floor below.

The Baja California peninsula produces approximately 90% of Mexico's wine. Spanish Jesuits established the region's viticultural foundation in the 16th century when they planted Misión grapes — a variety derived from Listán Prieto/País — throughout their mission system to supply sacramental wine. By the time of Mexican independence in 1821, winemaking was widespread across the peninsula. During American Prohibition, Baja winemakers and American exiles supplied illicit wine and brandy across the border to the Los Angeles market, and ungrafted vines dating to the late 19th and early 20th century remain alive in the region.

The combination of the Mediterranean-like climate, sandy and granitic soils, and arid conditions means phylloxera and mildew pose little risk — which allows for dry-farming and low-intervention viticulture without the chemical protection that wetter European wine regions often require. The result is old and ancient vines that have survived intact, many own-rooted, producing tiny yields of concentrated, character-driven fruit. While the Valle de Guadalupe has moved toward a more modernized and tourist-oriented approach, Tecate remains more rugged and agricultural, home to producers like Bichi who work in a deliberately low-intervention, terroir-focused style.
