Producer profile

Paolo Fasolo

Agricola Fasolo Paolo, established in 1972 by Paolo Fasolo's grandfather, is a natural wine producer in Rovolon (Padua), on the north side of the Euganean Hills Natural Park in Veneto. The estate spans 4.5 hectares, comprising 3 hectares of vineyards and the remainder dedicated to olive trees and woodlands. The winery itself is immersed within the vineyards.

This estate cultivates a diverse range of grape varieties, including Glera, Pinot Blanc, Chardonnay, Pinot Noir, Corbinello, Cabernet Franc, Cabernet Sauvignon, and Merlot, with most plants aged between 15 and 40 years. The vineyards, predominantly on the north side of the Euganean Hills, benefit from steep slopes of marly and limestone soil, known locally as Biancone and red flake.

Since 2019, the vineyards have been managed naturally and are certified organic. The approach to viticulture involves low doses of copper and sulfur, along with macerated or fermented natural products, ensuring minimal intervention. In the winemaking process, nothing is added or removed from the grape juice; this includes avoiding temperature control, yeasts, sulfurs, or any other interventions.
