Fluxion is a traditional method sparkling apple wine made by brothers Jon and Chris Piana at Fable Farm Fermentory in Barnard, Vermont. The 2021 release is the fourth iteration of Fluxion, built from a multi-vintage blend of foraged cider apples aged in an assortment of wood barrels. Vermont maple syrup was added as the priming sugar to trigger a secondary fermentation in bottle, producing a fine, persistent mousse. The finished wine is bone dry with refreshing acidity.

The Fluxion blend is constructed from both one-year and two-year barrel-aged cider lots, blended once a year in the fermentory cave. Each year, a portion of the blend is barreled down and carried forward into the following year's blend, so older vintages accumulate in the wine over time. The fermentation vessels used include neutral oak barrels, stainless steel, and glass. No filtration, pasteurization, or sulfite additions are made at any stage.

The apples come from wild, abandoned, and cultivated trees found across the farm and neighboring fields, forests, and orchards throughout central Vermont. Fable Farm sources exclusively from organically and responsibly farmed ingredients. All fermentation is driven by native wild yeasts and bacteria, and the cider cures in the cave through a succession of microorganisms in both barrel and bottle. Fluxion shares the same base blend as Stillpoint, the farm's still apple wine, differing only in the addition of carbonation via the traditional method.

At around 7% ABV, Fluxion is lightly sparkling and sits closer in style to traditional Asturian or Basque cider than to Champagne, with a mid-level mousse and a profile that leans savory rather than fruity. It is unfiltered and typically shows some sediment from in-bottle fermentation activity, which can be left settled or gently integrated before serving.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Fable Farm

Brothers Jon and Chris Piana established Fable Farm as a vegetable CSA in Barnard, Vermont in 2008. By 2013, they transitioned focus from annual vegetable production toward perennial fruit trees, grapevines, and berry cultivation, and began producing fermented apple wine. The farm is located at 1525 Royalton Turnpike Road in Barnard, situated within a larger 850-acre agricultural cooperative that includes dairy, livestock, and vegetable enterprises collectively working to steward the historic Clark Farm, now conserved by the Vermont Land Trust.

Fable Farm sources apples from wild, abandoned, and cultivated trees found across the farm and surrounding countryside, foraging throughout central Vermont while their own nursery orchard continues to mature. The farm sources exclusively from organic and responsibly farmed ingredients. No lab yeasts, chemical preservatives, filtration, or fining agents are used at any point. Fermentation is entirely native, driven by ambient yeasts and bacteria present on the fruit and in the cellar environment.

Jon Piana manages the fermentory, which operates out of a barrel-vaulted cave beneath the barn. Fermentation and aging vessels include neutral oak barrels, stainless steel tanks, and glass demijohns. Apples are pressed over multiple weeks during harvest, fermented dry, and moved to the cave to mature. Lots are then blended into specific cuvees. Sparkling wines are made by either ancestral method or traditional method; Fluxion uses the traditional method, fermented fully dry before a dose of Vermont maple syrup is added to trigger secondary fermentation in bottle.

Barnard, Vermont sits in the foothills of the Green Mountains at approximately 1,700 feet elevation, within the Broad Brook watershed in Windsor County. The landscape is a mix of rolling fields, forests, and hillside farmland that has been in agricultural use since the late 1700s. Central Vermont's short growing season, cold winters, and acidic soils produce apples with pronounced natural acidity and complex tannin structure, qualities that translate directly into high-acidity, dry cider wine.

Vermont does not have a formal wine or cider appellation system equivalent to European AOC designations. However, the state has developed an identifiable regional style built around wild and heritage apple varieties foraged from abandoned orchards and roadsides, cold-climate fermentation, and low-intervention production. The neighboring La Garagista farm and winery, located a few miles from Fable Farm on the same chain of hills in Barnard, has helped establish central Vermont as a serious natural wine and cider region, working with cold-hardy hybrid grape varieties alongside apple-based ferments.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
