Description

Zillamina springs from Valencia's Alicante DO, crafted by Bodegas Pinoso cooperative through collaboration with Jenny & François importers. This organic white wine blends 51% Airén with 49% Macabeo, grown at 600 meters elevation on limestone-rich soils. The Mediterranean climate delivers 2,500-3,000 hours of annual sunshine, fostering intense aromatics in the hot, dry continental conditions. Following soft crushing and low-temperature maceration, the free-run juice ferments in stainless steel tanks for up to 30 days at controlled temperatures below 16°C. Light vegan-certified fining and filtration with minimal sulfur additions preserve primary fruit aromas, creating an authentic expression of Spanish terroir with sustainable winemaking practices.

Tasting notes

This brilliant ruby-purple wine displays rich aromas of red forest fruits with whiffs of Mediterranean spices. The palate reveals a well-structured, full-bodied profile with medium tannins and pronounced notes of black fruits, demonstrating excellent balance and the fierce Mediterranean terroir.

This versatile red pairs excellently with chicken kebabs and veggie burgers, but truly shines alongside Spain's traditional Pimientos del Piquillo Rellenos—roasted red peppers stuffed with manchego cheese and herbs.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. for heat we offer ice-packs upon request. please let us know should you think that there could be heat-related issues. again, if we don't hear anything from you regarding weather issues, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Zillamina is a collaboration between Jenny & Francois and Bodegas Pinoso, located in Pinoso within the Alicante Denominación de Origen in Spain, embodies the essence of organic winemaking. Since 1997, their vineyards have been certified organic by both the USDA Organic and the Valencia Organic Agricultural Committee. The winery focuses on nurturing limestone-rich soils to cultivate its main grape varieties: Monastrell, Macabeo, and Airén. Their approach to winemaking is conscientious and eco-friendly, utilizing light fining and filtration methods that are certified vegan-friendly, along with minimal sulfur additions, ensuring a sustainable and authentic wine experience.

Valencia's Alicante DO stands as one of Spain's most historically significant yet evolving wine regions, located in the southeastern corner of the Valencia Community along the Mediterranean coast. This distinguished appellation showcases how ancient winemaking traditions can flourish alongside modern innovation in one of Europe's most dynamic wine territories.

Alicante has a long history of grape growing and wine production, likely introduced by the ancient Romans. The Golden Age of Alicante wines occurred during the 16th and 17th centuries, when they were imported to northern Europe by English, Swedish, and Flemish merchants. By the 15th century, Alicante's wines were famous throughout Europe, with the town of Monòver internationally renowned for its Fondillón wine. The region received DO status in 1957, initially permitting just four grape varieties, with the Consejo Regulador later expanding to include additional international varieties that have proven successful in the region's unique terroir.

The appellation divides into two distinct and separate subzones that reflect dramatically different climatic and geological conditions. La Marina occupies the coastal strip between Denia and Calpe in the north, enjoying a Mediterranean climate with hot summers averaging 30°C and mild winters around 13°C. This coastal area receives approximately 500mm of annual rainfall and benefits from maritime influences that moderate temperatures. The larger Vinalopó subzone extends inland along the river of the same name, encompassing towns from Villena to Pinoso. Here, the climate becomes markedly continental and dry, with only 300mm of annual rainfall, summer temperatures often exceeding 35°C, and frequent winter frosts. This climatic diversity allows for remarkable versatility in grape cultivation and wine styles.

Monastrell reigns as the predominant grape variety, particularly thriving in the hot, dry conditions of the Vinalopó subzone where it produces robust, full-bodied red wines. The coastal La Marina area specializes in Moscatel de Alejandría, which achieves high must weights in the warm conditions and forms the foundation for the region's traditional dessert and fortified wines. Other authorized varieties include Alicante Bouschet, Bobal, Tempranillo, Garnacha, Cabernet Sauvignon, and Merlot for reds, while whites include Macabeo, Airén, Merseguera, and Chardonnay. The soils vary from sandy loam to clay with high porosity and excellent drainage, particularly along the Vinalopó banks where they become loose and sandy with minimal organic material.

Alicante's crown jewel remains Fondillón, a unique traditional dessert wine made from overripe Monastrell grapes aged for a minimum of eight years in oak barrels, often using solera systems similar to sherry production. This wine can range from dry to sweet depending on the grapes used and represents centuries of winemaking heritage. The region also produces exceptional Moscatel wines, with some earning royal recognition at Spanish state banquets. Modern Alicante has embraced quality over quantity, with younger generations of winemakers utilizing advanced technology and better understanding of terroir to create wines that compete internationally while maintaining their distinctive Mediterranean character.

Today, Alicante represents a fascinating intersection of tradition and innovation, where ancient varieties like Monastrell and time-honored techniques like Fondillón production coexist with modern viticulture and international grape varieties. Carrier will try to delivery a package up to three times before returning the package to us.
