Tasting notes

Pale gold with a light amber tint from skin contact. The nose is aromatic and layered, with white peach, dried apricot, citrus peel, chamomile, and a mineral granite thread. On the palate, medium-bodied with bright acidity, stone fruit, a gentle tannic texture, and a saline, persistent finish.

Taste profile
  • Style: Dry, medium-bodied skin-contact white; the multi-variety blend across several Alsatian grapes — from aromatic Muscat and Sylvaner to the more structural Auxerrois and Chasselas — gives the wine a range of texture and aromatic depth; the maceration adds gentle grip without heaviness; fresh and broadly approachable
  • Grapes & terroir: Muscat, Riesling, Sylvaner, Auxerrois, Chasselas, and Pinot Blanc; granite hillsides around Ammerschwihr farmed organically and biodynamically; permaculture, phytotherapy, and regenerative agricultural practices applied across the estate's 11 hectares; Demeter certified since 2020
  • Winemaking: Hand-harvested and manually sorted; whole-bunch partial maceration with gentle foot punchdowns; indigenous yeast fermentation; aged on fine lees in concrete vats inside the estate's anthroposophical bioclimatic cellar; bottled unfined, unfiltered, no added sulfur
  • Serving temperature & decanting: Serve at 52–57°F; a short 10–15 minute decant opens up the aromatics; also works slightly chilled as an aperitivo
  • Pairing: Choucroute garnie (Alsatian braised sauerkraut with charcuterie)
  • Similar to: Skin-contact Friulano from Friuli, Rkatsiteli from Kakheti, orange Grenache Blanc from Roussillon

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Returns Policy

Producer profile

Christian Binner

Domaine Christian Binner is rooted in Ammerschwihr in the Haut-Rhin, where the Binner family has been farming since 1770. Initially a polyculture operation, the estate transitioned to wine growing in earnest after World War II. Christian's father Joseph resisted the post-war drift toward mechanisation and synthetic inputs, continuing to farm with manure and natural treatments even before organic certification existed. This preserved vines planted in the 1930s that have never been exposed to chemical treatments.

Christian Binner took over the estate in 1999 and immediately deepened the organic commitment, working with Pierre Masson — a leading figure in applying Rudolf Steiner's biodynamic approach to viticulture — and drawing inspiration from Marcel Lapierre, the Beaujolais natural wine pioneer who had been a family friend and had helped Joseph Binner begin making wine without added sulfur in the 1990s. Official organic certification followed in 2004, and Demeter biodynamic certification in 2020. The estate has made no sulfur additions since 2013. Vineyard work is carried out by hand and with horses to avoid soil compaction.

The estate's bioclimatic cellar, completed in the 2010s after more than five years of planning, is built entirely from local materials — Vosges pink sandstone, oak beams, fir — following anthroposophical principles with curved forms, no right angles, and every stone oriented as it was found in the quarry. The structure maintains naturally stable temperatures year-round, allowing wines to ferment and age without mechanical intervention.

The estate now spans approximately 11 hectares, with plots on the Kaefferkopf, Wineck-Schlossberg, and Schlossberg Grands Crus. In 2015, Christian launched Les Vins Pirouettes, a collaborative label that helps neighbouring Alsatian organic and biodynamic growers produce and market zero-sulfur wines from their own cellars.

Wine region

Alsace, France

Alsace stretches along the eastern edge of France between the Vosges Mountains and the Rhine River, sharing a border with Germany to the east and Switzerland to the south. It is one of France's driest wine regions, sheltered from Atlantic rain by the Vosges to the west, giving it a semi-continental climate with warm, sunny summers and cold, clear winters. This low rainfall and high sunshine duration create naturally healthy vines and low disease pressure — conditions that make Alsace particularly well suited to organic and biodynamic viticulture.

The region's geology is exceptionally varied. Alongside Alsace's most famous granite soils — found around Ammerschwihr, Kaysersberg, and Turckheim — the appellation also encompasses limestone, sandstone, gneiss, marl, clay, and loess formations. Granite hillsides typically produce wines with vertical freshness and pronounced mineral character, while limestone and clay sites tend to give more body and aromatic richness. Around Ammerschwihr, where Domaine Binner farms, granite dominates the steeper hillside parcels.

Alsace is unusual in French wine in labelling wines primarily by grape variety. The region's seven principal white varieties are Riesling, Gewurztraminer, Pinot Gris, Pinot Blanc, Muscat, Sylvaner, and Auxerrois, with Pinot Noir the sole permitted red. For the Saveurs Macérés blend, the multi-variety approach draws on grapes whose aromatic profiles complement each other across a single maceration, allowing the skin contact to unify diverse aromatic registers into a coherent wine.

Alsace is home to 51 Grand Cru designated vineyards, covering some of the region's most distinctive sites. Approximately 25% of Alsatian vineyard area was certified organic or biodynamic by the late 2010s, a proportion well above the French national average and a figure that has continued to grow since.
