Tasting notes

The two-part maceration method, whole bunches plus direct-press blended back in, gives this wine textural complexity without going heavy on tannin. Concentrated apricot and white peach stay fresh rather than jammy, anchored by the high-acid sandy soils of Mount Compass.

  • Style: Dry orange wine; bright amber-orange; white peach, apricot, moreish acidity; light tannin grip
  • Grapes & Terroir: 100% Pinot Grigio; organic; glacial sand over yellow clay, Mount Compass, Southern Fleurieu, SA
  • Winemaking: Equal parts whole-bunch and direct-pressed juice, macerated ~2 weeks; direct-pressed wine blended in for freshness; unfined, unfiltered, zero SO2 added
  • Serving: Serve at 50-55F; no decant needed; works well lightly chilled
  • Pairing: Northern Thai food, larb, grilled fish, fresh goat cheese, green papaya salad
  • Similar To: For fans of skin-contact whites and orange wines who want texture without heavy tannin

Borachio's 2019 Pinot Grigio comes from the Mount Compass vineyard on the Fleurieu Peninsula, a sandy-soiled site with relatively high rainfall that sits at the cooler, more coastal end of the Southern Fleurieu region. The soils here are glacial sand over yellow clay, a combination that supercharges acidity in the finished wine.

The winemaking is a two-part approach: equal portions of whole-bunch and direct-pressed juice were macerated together for a couple of weeks with no forced extraction, then a separate portion of direct-pressed Pinot Grigio was blended in at the end to lift freshness. No fining, no filtering, zero SO2 added. The result is a bright orange-colored wine with the grip and texture of skin contact and the clarity of press wine keeping it alive.

On the palate, expect concentrated white peach and apricot, driven forward by moreish acidity and a light lick of tannin on the finish. It drinks like an orange wine made by people who also love good food: structured enough to hold up at the table, direct enough to keep pouring.

The wine's acidity and light tannin make it a natural alongside spicy, herb-forward dishes. Northern Thai food, as the producers suggest, is a genuine match: the fat and heat of larb or a green papaya salad work well against the wine's texture. Also strong with grilled fish, fresh cheeses, or anything with a squeeze of citrus.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Borachio

Borachio is the project of Alicia Basa and Mark Warner, who are based in Carey Gully in the Adelaide Hills. The two met at a hardcore show in Sydney in 2003 and moved to South Australia to make wine after working their first harvest with James Erskine of Jauma. They launched Borachio in 2016. They have also spent time with Sylvain Martinez in the Loire Valley.

Fruit is sourced from organically farmed vineyards in Mount Compass and Mount Torrens. The Mount Compass site features glacial sand over yellow clay soils, which Warner credits as a key driver of acidity in his wines. All vineyard work is done by contract crews paid on an hourly award wage set by the South Australian Government. Since 2024, Borachio has also focused on a site in the Blewitt Springs sub-region of McLaren Vale.

Borachio wines are made with zero additives and zero sulfur added. Mark Warner describes the approach as pragmatic rather than dogmatic: the goal is stability and drinkability in genuinely additive-free wines. Depending on the wine, techniques include whole-bunch maceration, carbonic maceration in stainless steel, direct pressing, and barrel aging. All wines are unfined and unfiltered.

Wine region

Mount Compass, South Australia, Australia

Mount Compass sits within the Southern Fleurieu, the southernmost wine region on the Fleurieu Peninsula in South Australia. The climate is Mediterranean and strongly shaped by proximity to the coast, with the Gulf St Vincent and Southern Ocean moderating temperatures through the growing season. Mark Warner describes the site as frequently conflated with neighboring McLaren Vale, but with a cooler and more coastal character.

The soils at Mount Compass are glacial sand over yellow clay, a combination that produces wines with naturally high acidity and lighter extraction than sites with heavier clay profiles. The Southern Fleurieu carries Australian Geographical Indication status and sits within the broader Fleurieu wine zone alongside McLaren Vale, Langhorne Creek, Currency Creek, and Kangaroo Island. Pinot Grigio, Chardonnay, Savagnin, and Pinot Noir are among the varieties Borachio sources from here.
