Tasting notes

Deep ruby-purple with a lively, frothy mousse. The nose reveals dark plum, cassis, smoky blackberry, and a hint of wild herbs. On the palate, tart red fruit meets vibrant acidity and a peppery, spicy finish. Light tannins add structure without weight.

Pradarolo Indocilis Rosso Frizzante 2021 is a natural sparkling red wine from Podere Pradarolo, the estate of Alberto and Claudia Carretti in the hills southwest of Parma, Emilia-Romagna. Made from 100% Barbera grown organically on clay-limestone soils of Cretaceous origin, the grapes undergo an extended 30-day maceration before fermenting spontaneously with indigenous yeasts. The wine is then refermented in bottle using fresh Barbera must and left undisgorged, preserving its cloudy, rustic character. Pradarolo Indocilis Rosso Frizzante 2021 sees no sulfur additions, no filtration, and no fining—a traditional Emilian sparkling red in its purest form.

Prosciutto di Parma, gnocco fritto, mortadella, aged Parmigiano-Reggiano, salumi board, pizza margherita, roasted pork loin.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Podere Pradarolo

Podere Pradarolo sits in the commune of Varano de' Melegari, southwest of Parma in Emilia-Romagna. The Carretti family purchased the 60-hectare property in 1972, though wine production only began in 1989 when Alberto Carretti, formerly a microbiologist specializing in Parmesan cheese and Emilian charcuterie, redirected the estate toward viticulture. His scientific background in fermentation informed his approach to winemaking from the start.

Alberto and his wife Claudia cultivate just five hectares of vines on slopes between 250 and 500 meters elevation, positioned on the left bank of the Ceno River in a natural south-facing amphitheater. They work exclusively with indigenous grape varieties: Malvasia di Candia Aromatica and Spergola for whites, Barbera, Croatina, and Termarina for reds and rosés.

The estate follows strict organic and biodynamic principles. In the vineyard, only copper and sulfur treatments are used. The winemaking philosophy emphasizes extended maceration, ranging from 30 days to nine months depending on the wine, fermentation with native yeasts at uncontrolled temperatures, and bottling without fining, filtration, or added sulfites. This approach produces wines with distinctive character tied closely to their specific terroir.

Podere Pradarolo's range includes skin-contact whites under the Vej label, traditional method sparkling wines, and the Indocilis line of frizzante reds and rosés. The name "Indocilis" reflects the untamed, uncompromising nature of these wines—they ferment and referment according to their own rhythm, undisgorged and unmanipulated.

Wine region

Emilia–Romagna, Italy

Emilia-Romagna is a region in northern Italy stretching from the Po River valley to the Apennine foothills, bordered by Lombardy, Veneto, Tuscany, Liguria, and the Adriatic Sea. The region is renowned worldwide for its culinary heritage, Parmigiano-Reggiano, Prosciutto di Parma, Culatello di Zibello, mortadella, balsamic vinegar, and fresh egg pasta all originate here. Wine production, though less celebrated internationally, has equally deep roots.

The western part of Emilia-Romagna, particularly the hills surrounding Parma, Piacenza, and Reggio Emilia, has grown grapes since Roman times. Vineyards in this area sit on soils of Cretaceous origin, clay, limestone, sandstone, and marl, at elevations ranging from 200 to 500 meters. The climate is continental with Mediterranean influence, marked by warm summers, cold winters, and significant temperature variation between day and night. Breezes from the Ligurian coast moderate conditions and contribute to aromatic development in the grapes.

Indigenous varieties define the region's wine identity. Lambrusco, the famous sparkling red, dominates production in Modena and Reggio Emilia. In the Parma hills, Malvasia di Candia Aromatica yields aromatic whites and skin-contact orange wines, while Barbera and Croatina produce reds and frizzante styles. Lesser-known grapes like Termarina, Ortrugo, and Spergola add diversity to the local wine landscape.

For decades, Emilia-Romagna's wine industry focused on volume production, but a growing movement of small producers has revived traditional, low-intervention winemaking. These vignerons favor organic farming, spontaneous fermentation, extended macerations, and minimal or zero sulfur additions. The result is a new generation of wines that reflect terroir and tradition rather than industrial efficiency.

Today, Emilia-Romagna stands as one of Italy's most exciting regions for natural wine, offering bottles with character, history, and genuine connection to the land.
