Tasting notes

Warm amber-gold with a soft, hazy glow and a gentle, persistent bead. The nose is aromatic and layered, with yellow apple, mango, white flowers, citrus peel, and a mineral-volcanic undercurrent. On the palate, lively acidity and fine effervescence frame tropical fruit, salinity, and a clean, refreshing finish.

BodyFruitTanninAcidity
  • Style: Dry, medium-bodied naturally sparkling orange wine; the brief skin maceration on the base wine gives an amber tint, phenolic texture, and aromatic complexity beyond a conventional pét-nat; the frozen must method for secondary fermentation produces a gentle, fine bead rather than aggressive carbonation
  • Grapes & terroir: Coda di Volpe, Falanghina, and Fiano from organically farmed old vines; volcanic soils at high altitude in Irpinia, Campania; the cuvée is named in honor of Olimpia, an elderly woman who has tended an over-80-year-old vineyard; the blend draws on Cantina Giardino's various old-vine parcels across Avellino province
  • Winemaking: Brief skin maceration of the base wine; spontaneous fermentation with indigenous yeasts; eight months aging in oak barrels; secondary fermentation in bottle via the addition of frozen must (Cantina Giardino's proprietary "Metodo Olimpia"), which restarts in spring; no fining, filtration, or added sulfites
  • Serving temperature & decanting: Serve at 46–50°F; no decanting; pour gently to control sediment and preserve the fine bead; serve in a broad glass rather than a flute to allow the aromatic complexity to open
  • Pairing: Fritto misto di mare (mixed fried seafood)

Cantina Giardino Bianco Frizzante Metodo Olimpia 2021 is a naturally sparkling white wine produced by Antonio and Daniela De Gruttola at Cantina Giardino in Irpinia, Campania. A blend of Coda di Volpe, Falanghina, and Fiano from organically farmed old vines on volcanic soils at high altitude, the base wine undergoes brief skin maceration and spontaneous fermentation with indigenous yeasts, then eight months aging in oak. Secondary fermentation in bottle is achieved using frozen must from the same harvest, creating natural effervescence over winter and spring. Cantina Giardino Bianco Frizzante Metodo Olimpia 2021 is bottled unfined, unfiltered, and without added sulfites. 14% ABV. Campania IGP.

Fritto misto di mare, Japanese tempura, grilled branzino, fried zucchini blossoms, aged Provola affumicata, Vietnamese summer rolls, Mediterranean mezze.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Cantina Giardino

Cantina Giardino was established in Ariano Irpino by Antonio and Daniela De Gruttola, built on experiments made in the late 1990s at the cellar of a man they knew as Professor Giardino, from whom the winery takes its name. The commercial project launched in 2003 with a mission to rescue the neglected old-vine parcels of Irpinia that local farmers could no longer sustain. Industrial farming had uprooted many indigenous varieties across the province during the postwar decades, and Antonio and Daniela set out to reverse that process by farming and vinifying the surviving sites.

Antonio trained in food technology before specializing in viticulture and oenology in Piedmont. Daniela, trained as an architect, contributes practical and creative dimensions to the project, including crafting terracotta amphorae by hand from soil excavated from the vineyards. Today Cantina Giardino manages approximately seven hectares across sixteen parcels in the province of Avellino, with varieties including Aglianico, Fiano, Greco, Coda di Volpe, and Falanghina, some in vines exceeding 100 years old. All farming is organic and all work in the vineyard is by hand. Vines are trained in the traditional alberello style where possible, which necessitates fully manual harvesting.

In the cellar, fermentations are spontaneous and proceed without temperature control. Aging vessels include handmade terracotta and sandstone amphorae and casks of local chestnut, acacia, cherry, and mulberry. No fining, no filtration, and typically no added sulfites. Every vintage carries a label designed by a different local artist, reflecting the project's connection to the artistic and cultural life of the region. The Metodo Olimpia sparkling wine represents an experimental extension of these principles into a naturally sparkling format, using a technique of Antonio's own devising.

Wine region

Campania, Italy

Irpinia occupies the mountainous interior of Campania, within the province of Avellino in southern Italy. The landscape is defined by high-altitude hillsides, ancient volcanic soils, and a continental climate moderated by the Apennines, producing conditions that are cooler and less extreme than the Mediterranean coast. Vineyards sit at elevations of 400 to 600 metres, and the volcanic and clay-limestone soils across the province give indigenous white varieties like Fiano, Greco, and Coda di Volpe both aromatic richness and firm structural acidity.

The white grape varieties of Irpinia have achieved the highest levels of formal recognition in Italy. Fiano di Avellino DOCG produces some of the country's most age-worthy white wines, characterized by hazelnut, citrus, and a distinctive mineral salinity. Greco di Tufo DOCG, grown on sulfurous tufa soils around the village of Tufo, produces whites with a sharper, more mineral-driven profile. Coda di Volpe is a less widely known indigenous variety but occupies an important place in the region's traditional field blends, valued for its aromatic freshness and moderate alcohol. Falanghina, another indigenous white, is grown throughout Campania and adds floral and citrus character to blends.

The Metodo Olimpia is named in honor of Olimpia, an elderly woman who has tended a vineyard of over 80 years of age in the hills of Irpinia, a figure that embodies the kind of artisanal, custodial relationship with old vines that defines Cantina Giardino's approach. The wine is classified as Campania IGP, giving Antonio and Daniela De Gruttola the freedom to blend across their various old-vine parcels and work outside the formal DOCG framework.
