Medium ruby with a purple tint. The nose shows red cherry, blackberry, dried herbs, and a clear garrigue note of lavender and thyme. The palate is round and warm, with ripe dark fruit, soft tannins, moderate spice, and a finish that lingers with earthy scrubland character.

Les Caves Cathédrales Mr. & Mrs. Theo T.O. 2023 is a dry red wine produced by Laurent Clapier at his biodynamic estate in Saint-Restitut, in the Grignan-les-Adhémar appellation of the southern Rhône Valley. The blend is based on Grenache and Syrah from Demeter-certified biodynamic vineyards, with vines ranging from 8 to 21 years of age growing on clay-limestone soils. Each variety is vinified separately in stainless steel before blending and aging in concrete vessels. Les Caves Cathédrales Mr. & Mrs. Theo T.O. 2023 is the estate's signature red cuvée, bottled at 13% ABV.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Mr. & Mrs. Theo, formerly known as Mas Théo, is a biodynamic estate in Saint-Restitut in the Drôme Provençale, operated by Laurent Clapier. The estate name is a simplification of "Mas Théolas," the old family farm name given by village elders to reflect the long lineage of the Clapier family in the area. Laurent took over from his parents, Louis and Mireille Clapier, in 1999, inheriting 33 hectares of vines, 23 hectares of meadow, and 16 hectares of lavender, consolidated from three family farms across multiple generations.

From the start, Laurent committed to organic farming and received organic certification in 2004. His own winemaking project, Mas Théo, launched formally in 2005. As he deepened his understanding of the vineyards, he began applying biodynamic practices, and the estate received Demeter biodynamic certification in 2011. That same year he acquired Les Caves Cathédrales, a set of ancient stone quarries in Saint-Restitut carved into the chalky hillside. The caves cover 86,000 square feet inside the mountain and maintain a naturally constant temperature of 53-57°F year-round, making them ideal for wine aging without mechanical temperature control. Laurent moved his winemaking operations into the Caves Cathédrales in 2012.

The T.O. cuvée is the estate's identity wine, representing the principal red terroirs of the estate and designed to showcase the Grignan-les-Adhémar appellation through a Grenache-Syrah blend. In the cellar, each variety is vinified separately before being blended and aged in concrete vessels. No synthetic inputs are used at any stage, from vineyard to bottle.

The Caves Cathédrales also function as a visitor and educational space, with tasting rooms, a production facility, and an area made available to young winemakers in the region, reflecting Laurent Clapier's investment in the local wine community.

Rhône Valley, France

Grignan-les-Adhémar is an AOC at the northern edge of the southern Rhône wine region, covering around 1,800 hectares of vineyards across 21 communes in the Drôme department, on the left bank of the Rhône between Montélimar to the north and Saint-Paul-Trois-Châteaux to the south. The appellation was formerly known as Coteaux du Tricastin until 2010, when it was renamed to avoid association with a nearby nuclear facility and to better reflect its geographic and cultural identity.

The zone occupies a transitional position between the northern and southern Rhône, and that in-between character shows in its wines. The climate is Mediterranean, with hot, dry summers and mild winters, but the slightly elevated latitude and altitude compared to appellations further south mean that the wines tend to show more freshness and restraint than those of the deep south. The Mistral wind, channeled through the Rhône Valley, reduces humidity and disease pressure across the vineyards, contributing to vine health and concentration in the fruit.

Soils are diverse. The appellation sits on four main geological formations: rounded Rhône pebbles, high alluvial terraces at 490-655 ft with clay-limestone subsoils, lower alluvial terraces, and sandy soils. The Mas Théo / Mr. & Mrs. Theo estate in Saint-Restitut, one of the 21 communes within the AOC, sits on clay-limestone terrain typical of the higher terraces, which gives the wines structure and mineral character alongside the warm Mediterranean fruit profile.

Red wines make up the majority of production, built primarily on Grenache and Syrah. Grenache contributes ripe red fruit and roundness, while Syrah adds structure, pepper, and depth. The appellation also produces white and rosé wines, but reds are its identity. Alongside vines, the landscape is populated with lavender fields, truffle oaks, and olive groves, which define the Drôme Provençale character and often show up in the garrigue notes of the wines.
