Tasting notes

Deep golden-amber with a clear, warm tone. The nose is oxidative and aromatic: hay, dried herbs, apricot, walnut, and beeswax, with a limestone mineral backbone. The palate is structured and fresh, with the acidity cutting through the oxidative richness toward a clean, long finish.

BodyFruitTanninAcidity
  • Style: Dry, medium-bodied white with deliberate oxidative character from aging under veil; aromatic and complex with hay, dried herb, and apricot typical of Roussanne; fresh acidity holds the wine together
  • Grapes & Terroir: 100% Roussanne (Bergeron); biodynamically farmed by Gilles Berlioz; poor shallow limestone subsoil; south-facing, Chignin-Bergeron zone, Savoie; Vin de France
  • Winemaking: Three weeks carbonic maceration; one week punchdowns; aged oxidatively under veil in 225L barrels; no fining, no filtration; zero added sulfites
  • Serving temperature & decanting: Serve at 52-56°F; decant 20-30 minutes; best with 5 or more years of aging
  • Pairing: Aged Comté with walnuts
  • Similar to: Oxidative Jura Savagnin sous voile, aged white Hermitage, structured Chignin-Bergeron

Jean-Yves Péron Les Matlines 2023 is a dry white wine made by Jean-Yves Péron as a négociant cuvée from 100% Roussanne, known locally as Bergeron, grown biodynamically in Chignin, Savoie, by grower Gilles Berlioz. The vines, a mix of young and older plantings, grow on poor, shallow limestone subsoil with a south-facing exposure on a predominantly west-facing slope in the Chignin-Bergeron zone. After three weeks of carbonic maceration and one week of punchdowns, the wine is aged oxidatively under veil in 225-liter barrels. Jean-Yves Péron Les Matlines 2023 is bottled without fining, filtration, or added sulfites under Vin de France.

Aged Comté, poulet au vin jaune, roast pork with herbs, nduja, miso-glazed black cod, boquerones, smoked salmon, washed-rind cheese, galabart.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.

Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.

Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.

Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.

Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jean-Yves Péron

Jean-Yves Péron is one of the few figures in French winemaking who has built a coherent body of work from an alpine region previously overlooked by serious wine buyers. Born and raised in Savoie, he trained in Bordeaux, worked with Thierry Allemand in Cornas and Bruno Schueller in Alsace, then returned to the Alps in 2004 to start making wine from steep, old-vine micro-parcels above Albertville. By the time he obtained a négociant license in 2011, he had already established a reputation for skin-contact whites and carbonic Mondeuse reds that had little precedent in Savoie.

The négociant license expanded his range in two directions. The I Vicini project sources organic Piedmontese fruit from growers in the Casale Monferrato and Asti areas and vinifies it in Savoie with his standard protocol: native yeasts, no additions, no filtration. The Les Voisins project does the same with organic Alsatian fruit. And the Les Matlines cuvée represents a different kind of collaboration: sourcing Roussanne from Gilles Berlioz in Chignin, one of the best biodynamic growers in the Chignin-Bergeron zone, and applying a cellar technique borrowed from the Jura rather than Savoie: aging under veil in 225-liter barrels to develop an oxidative complexity that the variety's naturally rich aromatic profile can absorb without losing freshness.

The total production across all labels, estate and négociant, runs to approximately 15,000 bottles per year, kept deliberately small to maintain quality across the full range. Péron's cellar, built on the heights above Conflans in 2017, is equipped with a range of vessels, including neutral oak barrels, stainless steel, fibreglass, and terracotta amphora, chosen by cuvée rather than by convention. He is also known within the Savoie winemaking community as a mentor and collaborator for younger producers interested in the natural wine approach in a region where it has only recently taken root.

Wine region

Savoie, France

Chignin is one of the 16 named crus within the AOP Vin de Savoie, located on the south and southwest-facing limestone hillsides southeast of Chambéry in the Savoie department. Within Chignin, the designation Chignin-Bergeron applies specifically to white wines made from 100% Roussanne, known locally as Bergeron, and represents one of the most prestigious white wine appellations in the Savoie region. The hillsides above Chignin, particularly those with southern and western exposures on the steep slopes of the Bauges range, produce Roussanne of unusual aromatic intensity and structural depth.

Roussanne is a white variety that originated in the northern Rhône Valley, where it is used alongside Marsanne in white Hermitage and Crozes-Hermitage. In Savoie, it arrived centuries ago under the name Bergeron and became closely associated with the Chignin cru, where the combination of limestone bedrock, poor shallow soils, and warm south-facing slope exposure allows the variety to ripen its naturally large, thin-skinned berries to full aromatic maturity while the altitude preserves freshness and acidity. Roussanne's characteristic aromatics, dried apricot, hay, white flowers, and herbs, are particularly pronounced in Chignin-Bergeron, where the limestone terroir adds a mineral backbone that prevents the variety's naturally rich profile from becoming heavy.

Gilles Berlioz, who grows the Roussanne used in the Les Matlines négociant cuvée, is one of Chignin's most respected producers. His estate, Domaine Berlioz, farms both the Chignin and Chignin-Bergeron crus on the limestone hillsides above the village, working biodynamically and with minimal intervention in the cellar. The combination of his biodynamic farming and Péron's oxidative cellar approach, aging the wine under veil in the Jura sous voile tradition, produces a Roussanne entirely outside the conventional Chignin-Bergeron register: more complex, more oxidative, and more demanding of patience than the appellation's standard early-drinking whites.

The sous voile technique, borrowed from the Jura winemaking tradition, allows a film of yeast to form on the surface of the wine in partially filled barrels, protecting it from complete oxidation while simultaneously imparting the distinctive walnut, hay, and dried fruit character associated with this style.
