  • Style: Dry, medium-bodied skin-contact white with light amber colour; the five-variety blend brings aromatic lift from Viognier and Vermentino, structural breadth from Chenin Blanc, and a familiar California Chardonnay backbone, all given texture and grip from skin fermentation; approachable and food-friendly rather than austere or tannic
  • Grapes & terroir: 50% Chardonnay, 25% Chenin Blanc, 10% Viognier, 10% Vermentino, 5% Roussanne; sourced from responsibly farmed vineyards across Northern California, primarily Mendocino County
  • Winemaking: Skin-contact fermentation with indigenous yeasts; native yeast fermentation throughout; no fining agents; no filtration; no added sulfites
  • Serving temperature & decanting: Serve at 50–55°F; no decanting required; a slight chill brings out the aromatic brightness of the Viognier and Vermentino

Tasting notes

Light amber-gold with a warm copper tint and good clarity. The nose is aromatic and fresh, with dried apricot, tangerine, white flowers, and a hint of chamomile. On the palate, dry and medium-bodied with soft tannin, lively acidity, stone fruit, and a clean, slightly bitter citrus finish.

Food pairings

Jambon de Bayonne, Korean bibimbap, grilled halloumi, spiced chickpea stew, roasted cauliflower with tahini, aged cheddar, smoked trout pâté.

Subject to Change All Hours Orange 2023 is a skin-contact white wine blended from five varieties grown on responsibly farmed vineyards across Northern California: 50% Chardonnay, 25% Chenin Blanc, 10% Viognier, 10% Vermentino, and 5% Roussanne. Produced by Subject to Change Wine Co., founded by Alex Pomerantz in 2017, the All Hours label brings together fruit from multiple sources into a single creative blend — unlike the rest of the Subject to Change range, which is built around single-vineyard expressions. Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Subject to Change Wine Co. was founded in 2017 by Alex Pomerantz, a winemaker and former sommelier who moved from the East Coast to Northern California in 2011 for a harvest internship and never left. After spending several years heading up winemaking and management at a Sonoma winery, Pomerantz launched Subject to Change with a small team and a clear philosophy: nothing added in the cellar, nothing taken away, and a committed focus on responsibly farmed vineyards. The name itself came from an offhand comment during early planning conversations — and as Pomerantz has noted, it fits naturally with the ethos of natural winemaking, where each vintage is something genuinely new.

The winery operates primarily out of Oakland and sources fruit primarily from Mendocino County, building long-term relationships with growers and vineyard managers who share their commitment to healthy soils and chemical-free farming. Working with farming consultant David Rothschild, the team focuses on improving viticultural practices year by year rather than locking in a fixed formula. All wines are native-yeast fermented, bottled unfined and unfiltered, with no sulfur added at any stage — no exceptions.

The Subject to Change range divides into two tiers. The core wines are single-vineyard expressions that highlight specific sites and farmers. The All Hours label, by contrast, is intentionally a blend from multiple sources — a format Pomerantz describes as treating blending as a creative tool, producing wines designed for wider accessibility and versatility. The All Hours line includes whites, reds, rosé, and the skin-contact orange wine.

Wine region

California, United States

Northern California is a broad and geologically diverse wine-growing territory that runs from the San Francisco Bay north through Mendocino County and into Lake County, encompassing some of California's most varied viticultural conditions. Cabernet Sauvignon grows throughout the region, but the character it expresses shifts dramatically with elevation, proximity to the coast, and soil type. In Napa Valley, the variety has defined the region's identity since the 1970s, producing structured, age-worthy reds from the valley floor and mountain vineyards alike. But in Mendocino County, where Subject to Change Wine Co. sources much of its Cabernet Sauvignon fruit, the context is different: smaller estates, a stronger culture of organic and biodynamic farming, and a generation of natural wine producers who approach the variety with a lighter touch.

Redwood Valley, in the warmer inland section of Mendocino County, is one of the northernmost viticultural areas in California where Cabernet Sauvignon consistently ripens well. Protected from the cold Pacific fog that characterises the Anderson Valley to the west, Redwood Valley is drier and warmer, sitting above the Russian River watershed on alluvial and loam-rich soils. Old-vine plantings here, some from the 1960s, benefit from decades of root development and produce small, concentrated berries. The 2023 vintage across Northern California was marked by a wet winter, a cool and late growing season, and harvests running two to three weeks behind normal timing. Grapes arrived with high acidity, measured ripeness, and lower-than-usual alcohol levels — conditions that suited the fresh, minimal-intervention style that Subject to Change pursues.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

1) Reship the package right away: due to the very high cost of shipping and returns, we must charge a re-shipping fee to be determined based on package size and shipping destination.
