Description

COS Nero di Lupo Nero d'Avola is crafted from 100% Nero d'Avola grapes grown organically and biodynamically in Sicily's Vittoria appellation. Founded by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano in 1980, COS cultivates old bush vines at 230 meters elevation on red limestone-laced soils. The wine undergoes native fermentation with indigenous yeasts in concrete amphoras and ages for nine months in concrete vats, followed by three months in bottle. This mineral-driven wine represents one of Sicily's benchmark natural wine producers.

Tasting notes

Bright ruby red color with crimson highlights. The nose offers enchanting redcurrants, plums, licorice, volcanic ash, and Mediterranean herbs. The palate delivers ripe black cherry, blackberry, orange zest, balsamic notes, and chopped herbs with velvety tannins and mineral-driven structure.

Food pairings

Perfect with cured meats, pasta dishes, stone-baked pizza, and traditional Sicilian pasta alla norma.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package gets returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee to be determined based on shipping address and number of bottles. Shipping wine is extremely expensive, we are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to re-route a package after it's been shipped, we can do so upon payment of a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancelling fee – the amount depends on how big the order is. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat/frost-related issues. We offer ice-packs upon request. please let us know should you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct, otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times with no success or if you fail to retrieve your package at the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Giusto Occhipinti established COS winery in 1980 alongside friends Giambattista Cilia and Cirino Strano in Vittoria, Sicily. The winery name derives from the initials of their surnames (Cilia, Occhipinti, Strano). Located in southeastern Sicily's Ragusa province, COS operates from a historic 1880s winery building that originally served Sicily's booming 19th-century wine trade.

Giusto Occhipinti pioneered organic viticulture in Sicily, converting COS to certified organic farming in the 1980s, decades before the movement gained mainstream acceptance. The estate practices biodynamic agriculture, following astronomical calendars and using natural composting techniques with herbal preparations. COS manages vineyards in the hot, dry climate of southern Sicily, where old bush vines are head-trained close to the ground for wind resistance.

COS revolutionized Sicilian winemaking by introducing clay amphora aging in the early 2000s. Giusto Occhipinti researched ancient winemaking vessels and installed over 150 Spanish-sourced 440-liter clay amphoras, creating one of the world's largest collections. These porous clay vessels impart minimal flavor while allowing micro-oxygenation, preserving pure varietal character. The winery also uses large neutral oak botti and concrete tanks for different wines.

COS produces Sicily's only DOCG wine, Cerasuolo di Vittoria, blending indigenous Nero d'Avola and Frappato grapes. In 2005, COS became the first producer to achieve DOCG status for this appellation. Key wines include Nero di Lupo (100% Nero d'Avola), showcasing the variety's spicy, mineral-driven character, and Pithos Rosso, aged entirely in amphoras.

The estate's white wine portfolio features Pithos Bianco from local Grecanico grapes and various experimental cuvées. All wines undergo natural fermentation with indigenous yeasts and minimal intervention.

Giusto Occhipinti's work at COS established the winery as a benchmark producer in Sicily and a leader in Italy's natural wine movement. The estate's commitment to expressing terroir through minimal intervention has influenced a generation of Sicilian winemakers. COS wines are recognized internationally for their authenticity, reflecting the unique limestone-rich soils and Mediterranean climate of the Vittoria area through indigenous grape varieties and traditional techniques.

Mount Etna, Europe's most active volcano, produces some of Sicily's most prestigious wines from vineyards planted on mineral-rich volcanic soils at elevations up to 1,000 meters. The eastern slopes of Etna are particularly renowned for elegant reds and crisp whites with pronounced minerality.

The southeastern province of Ragusa, including the Vittoria area, produces the island's only DOCG wine, Cerasuolo di Vittoria, blending local Nero d'Avola with Frappato grapes. Western Sicily encompasses the historic Marsala region, famous for its fortified wines, while the Trapani province excels in both traditional and innovative winemaking approaches.

Sicilian wine showcases remarkable grape diversity, with indigenous varieties perfectly adapted to the Mediterranean climate. Nero d'Avola, Sicily's flagship red grape, produces full-bodied wines with dark cherry flavors, spice, and mineral undertones. The variety thrives in the island's hot, arid conditions and forms the backbone of many premium Sicilian wines.

For red wines, Nerello Mascalese dominates Etna's volcanic slopes, creating elegant, Burgundian-style wines with bright acidity and floral aromatics. Nerello Cappuccio provides color and structure in blends, while the lighter Frappato adds delicate fruit flavors to Cerasuolo di Vittoria.

White grape varieties include Carricante, Etna's premier white grape, producing mineral-driven wines with excellent aging potential. Grillo and Catarratto create crisp, aromatic whites, while Grecanico and Inzolia contribute to both dry wines and traditional Marsala production. The island of Pantelleria specializes in Moscato di Pantelleria, made from Zibibbo grapes that produce exceptional sweet wines.

Sicily's Mediterranean climate features hot, dry summers and mild winters, with significant diurnal temperature variations at higher elevations. Carrier will try to delivery a package up to three times before returning the package to us.
