Bolle di Magenta does something rare: it turns Garganega, a grape better known in still form, into a cloudy, low-pressure sparkling wine that smells of white peach, lemon peel, and crushed stone from volcanic soils. The undisgorged lees give it a slightly creamy, yeasty texture that balances the variety's naturally lean acidity without adding weight.

Bolle di Magenta is a frizzante made from 100% Garganega grown at Castelcerino di Soave, a village sitting at roughly 350 meters above sea level on the remains of an ancient volcano in the Verona province. The vineyard sits just outside the Soave Classico DOC boundary, so the wine is classified as IGT Verona. The soils are volcanic in origin, rich in clay and basalt, with a south-east exposure that extends the growing season into late October.

Grapes are harvested by hand in small crates and whole-cluster pressed without a destemmer or crusher. The free-run juice is chilled immediately, then fermented in cement tanks for approximately 20 days. Before alcoholic fermentation finishes, the wine is chilled and racked to preserve residual sugar for the secondary fermentation. It is bottled by hand in April at the first crescent moon of spring, then left to complete its second fermentation in bottle over the following months. The wine is released undisgorged, with its lees still present.

A small addition of sulfites is made at pressing; none is added at bottling. The wine contains no fining agents, no enzymes, and no stabilizing treatments. The natural sediment in the bottle is a byproduct of the undisgorged method and includes mannoproteins, beta-glucans, and tartrates from yeast lysis.

Serve with raw shellfish, particularly clams or oysters, where the mineral edge of the volcanic soils acts as a natural counterpart. It works equally well alongside light seafood pasta with olive oil and herbs, or as an aperitivo with salted almonds and soft fresh cheeses. Avoid heavily sauced or fatty dishes that would overwhelm the wine's delicate effervescence.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Nous

Nous is a cooperative project founded in 2015 by Sara and Alessandro Filippi, based at their estate Agricola San Giorgio in Soave, Verona province. Alessandro Filippi is an enologist who developed the Vini di Luce farming and winemaking method, which prioritizes the biological availability of the finished wine alongside flavor. Sara and Alessandro manage the Garganega vineyards at Castelcerino as the founding members of the cooperative.

The Nous approach to farming excludes all synthetic chemicals in the vineyard. Their practices go beyond certified organic standards, incorporating principles of regenerative agriculture focused on restoring soil carbon and maintaining biological vitality in the vines. No chemical inputs of any kind are used in either the vineyard or the cellar.

In the cellar, winemaking is kept minimal. Grapes are whole-cluster pressed, fermented in cement without enzymes or commercial yeasts, and bottled before fermentation finishes so that the secondary fermentation occurs in bottle. The Bolle di Magenta is released undisgorged with its lees, requires no fining or stabilizing treatments, and receives only a small sulfite addition at pressing.

Wine region

Veneto, Italy

The Soave growing area sits in the eastern hills of Verona province in the Veneto, northeast Italy. The historic Classico zone occupies a compact band of volcanic and basaltic hillside terrain, while the broader DOC extends into flatter, more alluvial ground. Castelcerino is a small village near the highest point of the Soave hills, where elevations reach 350 to 400 meters above sea level and soils are composed of volcanic material rich in basalt and clay. This cooler, higher-altitude microclimate slows ripening and preserves acidity in the Garganega grape.

The primary appellations in the zone are Soave DOC, Soave Superiore DOCG, and Recioto di Soave DOCG for sweet wines. Producers whose vineyards fall just outside the classified boundary, as is the case with Sara and Alessandro Filippi's estate at Castelcerino, label their wines as IGT Verona. Garganega is the dominant white grape of the region, known for its late ripening, high natural acidity, and aromas of white peach, lemon, almond, and wildflowers. The volcanic soils of the Classico hills add a distinctive mineral tension absent in wines grown on the flatland alluvial soils.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
