Carbonic Shiraz at 10.5% ABV with a slight natural spritz is not a common thing, and this wine pulls it off without feeling gimmicky. The ironstone soils of the Clarendon ridge give it real mineral grip beneath all the raspberry and rose perfume, so it reads as genuinely site-specific rather than just a fun party wine.

This Shiraz comes from Ralph Wood's dry-grown ridge vineyard in Clarendon, the elevated northeastern corner of McLaren Vale where ironstone-rich soils deliver pronounced mineral tension. The vines are unirrigated, and the ridge position means fruit ripens early relative to the rest of the region, giving Erskine the window to pick before the heat of late summer takes hold.

Winemaking is full carbonic maceration with whole bunches, no additions of any kind, no fining, and no filtration. A slight natural spritz from residual CO2 is left intact rather than degassed, keeping the wine lively and bright. It is bottled under crown seal.

The palate leads with raspberry, rose petal, and tangy sherbet, followed by violet and a streak of stony minerality. At 10.5% ABV, the alcohol stays well out of the way and the wine finishes with a clean, crunchy bite that makes it easy to reach for another glass. Serve lightly chilled.

The light body and bright acidity make this a natural alongside charcuterie, chicken liver pate, or a simple tomato-anchovy pizza. It also works well with lightly spiced lamb dishes where a heavier red would overpower. Serve slightly below room temperature, around 55-58F.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Producer profile

Jauma

James Erskine launched Jauma in 2010 from McLaren Vale Grenache fruit, after leaving a career as one of Australia's most decorated sommeliers. Before making wine full-time, he topped the Court of Master Sommeliers exams in Melbourne in 2008, was awarded Australian Gourmet Traveller Sommelier of the Year, and held a Len Evans Fellowship. He also earned an Honours degree in Agricultural Science with a focus on oenology and studied at UC Davis. During his sommelier years he was a founding member of Natural Selection Theory alongside Tom Shobbrook, Anton von Klopper, and Sam Hughes, an experimental collective that helped establish the natural wine movement in Australia.

The McLaren Vale vineyards Jauma sources from are organically managed, with Fiona Wood overseeing viticulture across the sites Erskine leases. All fruit is hand-harvested and dry-farmed or being weaned off irrigation. Erskine has not used sulfur since 2015. In 2018 he purchased a certified-organic cherry orchard in Lenswood in the Adelaide Hills, now operating as Jauma Farm, where new vine plantings of Chenin Blanc, Savagnin, Cabernet Franc, and Gewurztraminer are underway under certified organic management.

In the winery, ferments are wild-yeast only. Nothing is fined, filtered, or adjusted. No acids, enzymes, tannins, or preservatives are added. Wines are moved by gravity where possible and bottled under crown seal to preserve freshness and the natural CO2 that living wines retain. The Audrey's Fairy Garden Shiraz is made by full carbonic maceration of whole bunches, which extracts bright fruit aromatics while keeping the wine light and the tannins soft.

McLaren Vale, Australia

McLaren Vale sits on the Fleurieu Peninsula roughly 40 kilometres south of Adelaide, bordered by the Mount Lofty Ranges to the east and south, and the Gulf St Vincent to the west. The GI was officially recognised in 1997 and encompasses more than 40 distinct soil types, with geology ranging from ancient rocks deposited up to 750 million years ago through to younger coastal sediments. The region has a Mediterranean climate with warm, dry summers and winter-dominant rainfall, and afternoon sea breezes from the Gulf moderate temperatures across much of the zone.

Clarendon occupies the northeastern reaches of the McLaren Vale GI, perched at higher elevation in the foothills of the Southern Mount Lofty Ranges. Soils here include ironstone-rich outcrops that favour dry-grown viticulture and deliver wines with distinctive mineral structure. Shiraz and Grenache are the flagship varieties across McLaren Vale, with Shiraz particularly adept at expressing the contrast between the region's warmer, lower-lying sites and the cooler, rocky elevations of subzones like Clarendon and Blewitt Springs. The region has over 55 unique geologies, making single-vineyard and site-specific wines an important part of its identity.
