Les Terres Dubien l'Etoile du Berger is a Bordeaux wine crafted exclusively from Merlot grapes grown in the vineyards of Sainte Foy-la-Grande, situated in the eastern part of the Gironde department. The region's clay and limestone soil shapes the wine's character. Each grape is carefully handpicked to ensure quality. The wine undergoes a natural maturation process, aging for 18 months in a concrete tank without the use of fining or filtration techniques. A modest addition of 25 mg/l sulfur dioxide is made to preserve its authenticity and natural essence.

Producer profile

Les Terres Dubien

Founded in 2020, Les Terres Dubien is a small, charming estate with 3 hectares of vineyards spread across Saint-Yzans-du-Médoc, Couquèques, and Lesparre in the Médocaine peninsula near Bordeaux. Guided by winemaker Benoit, the estate dedicates itself to organic and biodynamic farming, highlighting the distinctiveness of each plot's terroir.

Les Terres Dubien adopts a customized approach to managing its vineyards. The techniques of tillage and plant cover are adapted to suit each plot. The vineyards benefit from plant infusions, many sourced directly from the estate or the surrounding Médoc area, complemented by minimal use of copper and sulfur. Manual harvesting, assisted by friends, infuses a personal essence into the wines.

The winemaking process at Les Terres Dubien emphasizes natural techniques. This includes using native yeasts and gentle extractions, often avoiding wine pumps. The goal is to bring out each wine's intrinsic fruit flavors and finesse. Depending on the cuvée, the wines are aged 8 to 18 months in vats and old barrels. Bottling is conducted without fining or filtration, and sulfur dioxide levels are carefully maintained between 0 and 30 mg/L, varying by vintage. Les Terres Dubien collaborates with other winemakers beyond the Médoc region, showcasing their openness to innovation and community engagement.
