Axel Prüfer, originally from East Germany, founded his winery, Domaine Les Temps des Cerises, in 2003 in the Languedoc region of France. Nestled in the picturesque surroundings of l'Hérault and surrounded by forests, Prüfer's vineyards are an epitome of natural biodiversity, coexisting harmoniously with local flora and fauna.

Prüfer's winemaking journey began after moving to France, where he immersed himself in the natural wine movement, learning from established natural winemakers before starting his venture. Les Temps des Cerises, located north of Beziers in Languedoc, is known for its challenging yet rewarding terrain, producing delicate and fresh wines from a region known for its harsh conditions. The winery's name, inspired by a Parisian anthem, resonates with the revolutionary spirit and embodies a metaphor for a hopeful future.

In his vineyards, spanning approximately 8.5 hectares on granite and quartz soils, Axel Prüfer employs a non-interventionist approach to winemaking. This includes practicing carbonic maceration, avoiding the use of pumps with all rackings fed by gravity, and using natural yeast for fermentation. His commitment to minimal intervention extends to rarely using sulfur dioxide and avoiding the influence of wood unless it's neutral. Prüfer's cellar predominantly uses large fiberglass tanks for fermentation, allowing the wine to express its true character and capture the essence of Languedoc's terroir.

The vineyards themselves are a testament to Prüfer's commitment to natural winemaking, with a diverse range of birds, insects, herbs, flowers, and even wild boars. In a unique method to protect his vineyards, Prüfer employs human hair collected from local hair salons to keep wild boars at bay.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
