This is a true blend in the wine sense: Bardos pulled from every barrel-aged cuvee of the 2019 season and dosed with 10% fresh juice, producing a cider that is simultaneously acetic, juicy, and funky with brettanomyces character. At just 50 cases, it captures a whole season in one bottle.

The Table Cider 2019 is a limited blended cuvee drawn from all of Bardos's barrel-aged single-varietal ciders from the 2019 season. Only 50 cases were produced. The blend was dosed with 10% fresh-pressed apple juice before bottling to prompt refermentation in bottle, then bottle conditioned until ready. Bottles were screen printed in Mexico and the cider was bottled at Old World Winery in Fulton, California with Giovanni Duca.

Bardos sources apples exclusively from dry-farmed, zero-spray orchards in Northern California, many of which have been abandoned or gone feral and contain trees over 100 years old. The 2019 season drew on heirloom varieties including Winesap, York Imperial, Empire, Ben Davis, Winter Banana, and Red Rome, sourced from sites such as Walker Apples in Graton and Grand View orchard in Sebastopol. No yeast or sulfites were added at any stage.

The blend was designed to capture the best qualities of each individual cuvee: brightness from the acid-forward barrels, juicy apple fruit, and the distinctive brett character that develops naturally in Bardos's cellar. Because all 50 cases sold out on a single pallet once bottle conditioning was complete, this is one of the rarest releases Bardos has made. The character is acetic, lively, and funky in the best sense.

The high acid and brett character make this a natural with aged cheeses, particularly funky washed-rind styles or aged cheddar. It holds up well against fatty charcuterie like pork rillettes or country pate. Try it alongside roasted pork with apple or braised cabbage dishes.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Bardos Cider

Bardos Cider was founded in 2019 by Aaron Brown and Colin Blackshear, high school friends from Sonoma, California. Brown had been introduced to farmhouse cider-making while working in England, spending a winter in rural Yorkshire learning from local cider makers before returning to California with equipment and barrels. The two launched Bardos with the goal of making cider from feral and abandoned apple orchards with no added yeast or sulfites.

Bardos works exclusively with dry-farmed, zero-spray orchards in Northern California, the majority of which have been abandoned for decades. The trees, many of them over 100 years old, survive solely on winter rains and require little intervention beyond routine pruning. Key fruit sources include Walker Apples, a fourth-generation family farm in Graton, and Grand View orchard in Sebastopol. Bardos does not irrigate or spray any of the orchards with which it works.

In the early vintages, Bardos produced cider at Old World Winery in Fulton, California, working with Darek Trowbridge, whose hands-off philosophy of shepherding rather than controlling fermentation aligned with Bardos's approach. All ciders are fermented on native yeast, barrel-aged, and bottled without sulfites. The Table Cider 2019 was bottled at Old World Winery with Giovanni Duca, dosed with 10% fresh-pressed juice at bottling to trigger in-bottle refermentation.

Sonoma County sits along California's North Coast, bordered by the Pacific Ocean to the west and the Mayacamas Mountains to the east. The county encompasses a wide range of microclimates, from the fog-heavy Russian River Valley to the warmer, drier Dry Creek Valley and Alexander Valley. It is best known today for wine grapes, but for much of the 19th and early 20th century it was apple country, with as many as 15,000 acres of apple orchards at the industry's peak.

By the time modern wine production took hold in Sonoma, much of that orchard acreage had been converted to vineyards or simply abandoned. The Gravenstein apple, centered around Sebastopol and Occidental in the western part of the county, became the signature heirloom variety, but dozens of other varieties including Winesap, York Imperial, Ben Davis, Empire, and Winter Banana survive in old homestead orchards scattered from west Sonoma up into Mendocino County. These trees are dry-farmed, relying entirely on winter rainfall, and their deep root systems produce fruit with concentrated flavor and high natural acidity.

Signature on delivery is mandatory for wine deliveries. Please make sure someone is at the shipping address to sign for the package.

If applicable, please consider delivering the package to a business address to ensure someone is available to sign for the package.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.

1) Reship the package right away: due to the very high cost of shipping and returns, we must charge a re-shipping fee to be determined based on package size and shipping destination.
