Baffo is named after an elderly local farmer whose moustache (baffo in Italian) became the symbol of the Sete project's connection to the land and the people who kept it alive. The wine is a blend of 50% Nero Buono, 25% Ciliegiolo, and 25% Bonamico, three varieties grown on clay-limestone soils in the Amaseno River Valley near Priverno, in the Province of Latina, about 100 km south of Rome.

Fermentation is spontaneous with indigenous yeasts in fiberglass vats. Ciliegiolo and Bonamico are co-macerated together for 24 hours on the skins, while Nero Buono is fermented separately with a 5-day skin maceration to extract its deep color and black-fruit character. The two lots are then blended and aged together on the lees for 10 months in fiberglass.

Nero Buono di Cori is a rare, deeply pigmented variety native to the Province of Latina, historically used as a blending grape for color in Cori DOC and Castelli Romani wines. Ciliegiolo brings brightness and cherry-driven aromatics. Bonamico is a near-forgotten local variety rescued by Sete from old vineyards in the municipalities of Priverno, Roccagorga, Maenza, and Roccasecca dei Volsci.

No chemicals are used in the vineyards. No sulfites are added at any stage. The wine is unfined and unfiltered.

Pour this with Roman-style braised oxtail (coda alla vaccinara), porchetta, or a plate of aged pecorino with local Itrana olives. The wine's bright acidity and modest tannins also hold up well against tomato-based pasta sauces.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.


Placed an order. What next?

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Sete Vini Naturali was founded in 2013 by childhood friends Emiliano Giorgi and Arcangelo Galuppi in Priverno, a small town in the Province of Latina, Lazio, located about 100 km south of Rome between the Monti Lepini mountain range and the Circeo National Park. Emiliano spent two vintages in 2010 and 2011 working at Le Coste di Gradoli, the influential natural wine estate run by Gianmarco Antonuzi, before returning to his home valley to start Sete with Arcangelo.

The Sete project is built around rescuing old and abandoned vineyards in the Amaseno River Valley, across the municipalities of Priverno, Roccagorga, Maenza, and Roccasecca dei Volsci. They began by purchasing grapes from or renting the vineyards of local elderly farmers, allowing them to work land that might otherwise have been abandoned. The vineyards grow on clay-limestone soils. Farming follows biodynamic principles and is certified organic by Suolo e Salute, though Sete is not Demeter certified. Everything in the vineyard and cellar is done by hand.

Winemaking at Sete is strictly minimal intervention. Fermentations are spontaneous using indigenous yeasts. All wines are aged in fiberglass vats with no temperature control additions. No sulfites are added at any stage. All wines are unfined and unfiltered. Each vineyard plot is vinified separately wherever possible, with the goal of expressing the specific character of each old-vine parcel and variety.

Wine region

Lazio, Italy

Lazio is a large central Italian region whose capital is Rome. It borders Tuscany and Umbria to the north, the Tyrrhenian Sea to the west, and the Apennines to the east. The coastal position and the mountain ranges combine to give the region a Mediterranean climate with moderating sea breezes and a relatively long growing season. Soils across Lazio are diverse, ranging from volcanic tufa and pozzolana in the Castelli Romani hills near Rome to the clay-limestone soils of the Amaseno River Valley in the southern Province of Latina.

Lazio is historically better known for white wines, particularly Frascati and Est! Est!! Est!!! made from Trebbiano and Malvasia. The region's only DOCG is Cesanese del Piglio, a red appellation southeast of Rome. Other significant red appellations include Cori DOC, where the rare native variety Nero Buono di Cori is the primary grape. Lazio is home to more than 200 documented grape varieties, many of which survive only in old mixed plantings farmed by elderly growers. A new generation of natural producers working in the region is recovering and vinifying these varieties separately, bringing attention to Lazio red wines for the first time on the international market.

We also have the option of delivering the package to a Carrier's store for pickup. Please reach out to us to coordinate.

Carrier will try to delivery a package up to three times before returning the package to us.
