This is Col Fondo the way it was always meant to be made — hazy, dry, and alive with bread crust, lemon zest, and salty minerality from 450-meter morainic soils. The field blend of six native varieties, including near-forgotten Boschera and Grapariol, gives it a complexity and grip you won't find in any tank-fermented Prosecco. Fine, persistent bubbles and a taut, saline finish make it one of the most compelling bottles in the style.

Col Tamarie is the single wine made by Alberto and Marta at Azienda Agricola Vigna San Lorenzo, a 4.5-hectare estate in the village of San Lorenzo, above Vittorio Veneto in the Treviso hills of northeastern Veneto. The vineyards face south and south-east at 450 meters above sea level, on stony, well-drained soils of morainic origin with a limestone base. The site sits just outside the Conegliano Valdobbiadene Prosecco Superiore DOCG boundary but falls within the broader Prosecco DOC zone.

The grapes are a field blend of native varieties: Glera alongside Bianchetta, Boschera, Grapariol, Perera, and Verdiso — old local cultivars that most producers in the area stopped growing decades ago. The estate is certified organic. Beyond certification, Alberto and Marta apply biodynamic preparations and practice unicist homeopathy in the vineyard, using only minimal sulfur and copper. Harvest is manual, in early October.

In the cellar, the wine undergoes spontaneous fermentation with indigenous yeasts, a brief maceration on the skins, and is then bottled unfiltered and unfined for a second in-bottle refermentation — the Col Fondo (ancestral) method. The lees remain in the bottle with no disgorgement, leaving the wine hazy and gently sparkling. No sulfur is added at any stage.

The result is a frizzante white that is dry, low in alcohol, and distinctly saline-mineral in character: closer in texture and complexity to a well-made pet-nat than to the clean, tank-fermented Prosecco dominating the market. Fine, soft bubbles carry aromas of bread crust, yellow pear, lemon zest, and hazelnut to a bright, mouth-watering finish.

An ideal match for fried or raw seafood: oysters, fried sardines, salt cod, or a plate of raw clams. The wine's salinity and acidity also cut through fresh goat cheese or a simple ricotta-based dish. Drink it at 45-48°F, with or without the sediment mixed in — both have merit.

Important Compliance Requirements

FedEx and other carriers we might occasionally use can only deliver wine to customers who are 21 years or older. Someone must be at the address to receive the package, carriers don't just drop a package and leave. They must ensure the person receiving the wine is 21 or older.


Re-shipping a Package

If a package is returned to us after three failed delivery attempts, we can only re-ship the wine upon payment of a re-shipping fee, to be determined based on the shipping address and number of bottles. Shipping wine is extremely expensive. We are sorry about this, but we have no other choice. Please make sure there's always someone at the address you enter as your shipping address.

If you'd like to receive a refund for a package that was returned to us after FedEx made three delivery attempts, we can do that but we must keep a $20 refund fee; FedEx charges us a lot of money for returns, unfortunately, I can't stress this enough.


Re-routing a Package

If you'd like to reroute a package after it's been shipped, we can do so for a $20 re-routing fee. We cannot re-route a package across state borders. For any change of address, please contact us as soon as possible, ideally within 1-2 days from placing the order or we cannot guarantee we'll be able to reroute or change your order's shipping address.


Canceling an Order

If you'd like to cancel an order after it's been shipped, we can do so upon payment of a small cancellation fee – the amount depends on the size of the order. Carriers charge us a lot of money to recall a package en-route.


Heat/Frost damage

We are not responsible for heat- or frost-related issues. We offer ice-packs upon request. Please let us know if you think that there could be heat-related issues. If we don't hear anything from you regarding weather issues before an order is shipped, or if you don't request a hold due to the weather, we are not responsible for heat/frost damage.

1. You will receive an order confirmation email with your order summary.*

2. As soon as your order ships from the warehouse, usually within 2-3 business days, this applies to all shipping rates, you will receive a shipping confirmation email with your tracking information. 2DAY shipping refers to shipping time; we still need 2-3 business days to prepare an order. We need to pick and pack, QA, add printed collateral, and palletize the orders.

3. Please track your package using the tracking service.

4. The carrier will attempt delivery a maximum of 3 times. After 3 delivery attempts, your package will be sent back to our warehouse.**

*Please ensure your email address is correct; otherwise, you will not receive the order and shipping confirmation emails.

**If delivery is attempted 3 times without success, or if you fail to retrieve your package from the carrier depot by the stated deadline, the shipping fee will not be refunded to the customer.

Azienda Agricola Vigna San Lorenzo, known commercially as Col Tamarie, was founded in the early 2000s by Alberto dalle Crode in San Lorenzo, a small village in the hills above Vittorio Veneto in the Treviso province of Veneto. In 2013, Alberto brought in Marta de Luca, a practitioner of unicist homeopathy, and together they developed what they describe as a homeopathic approach to viticulture — treating each vine individually and measuring energetic balance across the vineyard. They describe their wine as 'Mountain Prosecco,' reflecting the site's position at 450 meters, well above the typical Prosecco DOC floor.

The estate covers 4.5 hectares of south and south-east facing vines on stony morainic soils, completely surrounded by woodland. It is certified organic. Beyond organic certification, the team applies biodynamic preparations and limits vineyard inputs to small amounts of sulfur and copper. The vineyard was replanted with old local varieties that had largely disappeared from the area: alongside Glera, they grow Bianchetta, Boschera, Grapariol, Perera, and Verdiso, all historically present in this specific zone. The vines are harvested by hand in early October.

Col Tamarie produces one wine only. Fermentation is spontaneous using indigenous yeasts, with a brief skin maceration. The wine is bottled unfiltered and unfined using the Col Fondo ancestral method — in-bottle refermentation with no disgorgement, leaving lees in suspension and creating a soft, natural frizzante character. No sulfur is added at any stage, from fermentation through bottling. Annual production is approximately 20,000 bottles.

Veneto, Italy

Veneto occupies the northeastern corner of Italy, bordered by the Dolomites to the north, Friuli-Venezia Giulia to the east, and the Adriatic coast to the south. It is Italy's largest DOC wine-producing region by volume and spans an extraordinary range of terrains — from the steep pre-Alpine hillsides of Valpolicella and Conegliano-Valdobbiadene in the north, to the flat alluvial plains extending toward Venice. The climate is largely continental, with warm summers and cold winters, though the hills of the northern zones benefit from significant diurnal temperature variation and natural airflow from the mountains that preserves acidity in the grapes.

The Prosecco DOC is the broad production zone for Glera-based sparkling wine, spanning Veneto and Friuli-Venezia Giulia. Within it, the Conegliano Valdobbiadene Prosecco Superiore DOCG is the historic hillside core, recognized as a DOC in 1969 and elevated to DOCG in 2009, and designated a UNESCO World Heritage Site in 2019. The DOCG hills run east to west between the towns of Conegliano and Valdobbiadene, with south-facing vineyard slopes on soils derived from glacial moraines, marine sediments, limestone, clay, and sandstone. Altitude ranges from 100 to 500 meters, and the diurnal range at upper elevations allows for slow, aromatic ripening of Glera and companion varieties. Col Tamarie's San Lorenzo site sits at the northern, higher-altitude margin of the DOC — outside the DOCG boundary — on some of the most rugged and mineral-driven terrain in the zone.
