The wine carries the IGP Terre Siciliane designation and is produced in tiny quantities of around 1,300 bottles per year. The vineyard is farmed biodynamically with no synthetic inputs, using only green manure, compost, and copper-sulfur treatments when needed.\u003c\/p\u003e\u003cp\u003eFermentation is spontaneous in stainless steel with no temperature control. The wine rests in stainless steel until April after harvest, then is bottled unfined with minimal added sulfites. No oak. The result is a dry white that expresses Zibibbo's naturally high terpene content cleanly and without manipulation.\u003c\/p\u003e\u003cp\u003eIn the glass it shows golden yellow. The nose leads with yellow flowers, candied citrus, and apricot, with a balsamic undercurrent. On the palate it is medium-bodied, aromatic, and dry, with the grape's characteristic mineral and slightly saline finish.
