The juice ferments spontaneously in 2,000-liter stainless steel tanks over roughly two months, with occasional pigeage to manage the cap. Elevage takes place in the same tanks for an additional two months. The wine is bottled unfined, unfiltered, and with zero added sulfur.\u003c\/p\u003e\u003cp\u003eThe Youngster range is Nestarec's take on Beaujolais Nouveau — a snapshot of the vintage in its most immediate, unguarded form. It is designed to be drunk fresh, well-chilled, and without ceremony. The 2021 vintage in Moravia was noted for balance and freshness, which carries through in this wine's lively acidity and forward fruit.\u003c\/p\u003e\u003cp\u003eFarming across the Nestarec estate is certified organic (certification obtained in 2022, with organic practices in place since 2008).
