All vines are bush-trained, dry-farmed, and certified biodynamic under ICEA. Soils are calcareous clay with limestone, at elevations between 400m and 700m.\u003c\/p\u003e\u003cp\u003eThe wine originates from a crowdfunding campaign launched in 2016 by Gratias to rescue a mixed plot of around 20 grape varieties belonging to a local grower named Pepe, which was on the verge of being uprooted. That initiative grew into an ongoing community project: Gratias buys fruit from neighboring small farmers, some of whose vines are over 100 years old. The label portraits depict the actual farmers who grew the grapes.\u003c\/p\u003e\u003cp\u003eEach variety receives individual treatment in the cellar. Tardana is fermented whole-cluster for 3 to 4 weeks using indigenous yeasts, then aged for 3 months in clay tinajas. Macabeo is direct-pressed and aged for 3 months in old oak barrels.
