All fruit is farmed organically and harvested by hand.\u003c\/p\u003e\u003cp\u003eGrapes macerate whole-cluster, and the musts from each variety are added to the tank one after another, extending the total fermentation window. Fermentation is completed in bottle using indigenous yeasts, where the wine rests on its fine lees for a minimum of 10 months. No sulfur is added at any stage. The wine is not fined or filtered, and carries no vintage designation.\u003c\/p\u003e\u003cp\u003eIn the glass it shows a hazy, translucent raspberry-red with fine, persistent bubbles. The nose leads with fresh red fruit: raspberry, wild strawberry, and a hint of cranberry, followed by light floral and yeast notes. On the palate it is dry, light-bodied, and high in acidity, with the carbonation amplifying the wine's natural freshness.
