The fruit comes from two sites farmed by the Parra family: Entresendas, an ancient riverbed with alluvial soils, and Olla del Monte (known locally as Cuesta Colorá), where chalky clay slopes are covered with heat-retaining pebbles. The estate totals approximately 180 hectares and holds Sohiscert organic and Demeter biodynamic certifications.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested and fermented with indigenous yeasts in stainless steel. There is no malolactic fermentation and no sulfites added. The wine is lightly filtered before bottling. Winemaking is done in collaboration with Juan Antonio Ponce of Bodegas Ponce, one of the most respected natural winemakers in central Spain.\u003c\/p\u003e\u003cp\u003eThe result is a dry, light-to-medium-bodied white with a greenish-straw color, floral and citrus aromatics, flavors of green apple, lemon peel, and pear, and a clean mineral finish. It is also certified vegan by the European Vegetarian Union.
