The farm belongs to Giovanni Battista Mesina, a third-generation Sardinian shepherd whose family relocated to central Umbria in the 1960s. The vineyards share the hillside with olive trees and sheep pasture, farmed without synthetic inputs.\u003c\/p\u003e\u003cp\u003eThe wine is made by méthode ancestrale: grapes ferment spontaneously in an open-top resin tank, then the partially fermented wine rests in fiberglass through the winter. In February it is bottled with a dose of frozen must from the same harvest, triggering a natural secondary fermentation in the bottle. The wine is never fined, never filtered, and no sulfites are added at any stage.\u003c\/p\u003e\u003cp\u003eThe result is a lightly cloudy, gently fizzy white with brisk acidity and very low residual sugar. Trebbiano's natural character comes through cleanly: green apple, lemon peel, white peach, and a saline mineral thread that runs through the palate.
