The skins are then separated and softly pressed. Fermentation proceeds spontaneously with native yeasts directly in the amphora, followed by full malolactic fermentation and 12 months of aging on the lees in the same vessels. The wine is bottled unfiltered and unfined with minimal sulfites added.\u003c\/p\u003e\u003cp\u003eThe amphora is central to Cirelli's philosophy: the porous terracotta allows micro-oxygenation without imparting any oak or extraneous flavors, preserving what Cirelli calls the authenticity of the wine.
