This is one of 378 cases produced in 2016.\u003c\/p\u003e\u003cp\u003eThe grapes were co-fermented in locally made 450-liter concrete tinajas using native yeasts. After fermentation, the wine was aged for three months split equally between stainless steel vats and neutral older oak barrels. It was bottled without fining or filtration and with no added SO2.\u003c\/p\u003e\u003cp\u003eNebbiolo brings dusty rose and dried cherry notes along with its trademark firm acid and grip. Tempranillo adds red fruit and earthy spice. Together in this warm-climate, high-altitude setting they produce something lighter and more lifted than you might expect — bright, crunchy, and savory, with a persistent mineral edge and a chili pepper vibe that runs through the finish.\u003c\/p\u003e\u003cp\u003eBichi's approach is rooted in recovery: identifying old, near-forgotten dry-farmed vineyards in the Tecate mountains and making wine from them with as little intervention as possible.
