The vines are farmed biodynamically, certified organic, and harvested by hand at the end of September.\u003c\/p\u003e\u003cp\u003eGrapes are macerated on skins for approximately two weeks before the two varieties are blended in concrete tank, where the wine rests for one year without racking. It is bottled unfined and unfiltered with zero added sulfur. The name Terra Sasso — stony earth — is a direct reference to the rocky, mineral-charged terroir of the Gargano.\u003c\/p\u003e\u003cp\u003eThe wine shows an intense ruby color. On the nose it is fruity and balsamic with earthy and tobacco notes drawn from the red soils of the Gargano. The palate is full-bodied but balanced by mineral salinity and firm tannins.
