A portion of rosé (approximately 40%) was added back to the blend, followed by a small addition of local organic honey at bottling to restart fermentation in the bottle under crown cap. That in-bottle refermentation gives the wine its lively, persistent effervescence. No fining, no filtration, no added sulfur — zero-zero from start to finish. Production was limited to 230 cases.\u003c\/p\u003e\u003cp\u003eThe wine comes in at 10% ABV and drinks like a very low-key, fizzy red — tart dark fruit, snappy acidity, and a slight earthy minerality underneath.
