The vines are head-trained, and the combination of abundant sun, persistent wind, and cool nights preserves acidity in the fruit.\u003c\/p\u003e\u003cp\u003eIn the cellar, Joe Swick handled the grapes as whole clusters, foot-stomping them one to two times daily through fermentation with native yeasts. After approximately 30 days of skin maceration, the wine was gently pressed into neutral French oak for aging. No fining, no filtration.
