The vines, originally planted by Ennio Romano's father-in-law and previously sold to the local cooperative, sit at 420 to 470 meters above sea level on clayey and rocky soils. The wine is bottled under the Beneventano IGT classification.\u003c\/p\u003e\u003cp\u003eFermentation is spontaneous with native yeasts in open vats, with approximately 18 days of maceration on the skins. The wine then ages for 9 months in stainless steel, followed by at least 2 months in bottle. No filtration, no fining, and no sulfites are added at any stage.\u003c\/p\u003e\u003cp\u003eIn the glass, Supersannios is a deep ruby red. The nose leads with red berry fruit and spice. On the palate it is warm, juicy, and full-flavored with good length.
