Fermentation proceeded with native yeasts only. The wine aged eight months in neutral French oak, then was bottled unfined and unfiltered at 12% ABV. No additions were made beyond a small amount of sulfur at bottling.\u003c\/p\u003e\u003cp\u003eGraciano is a high-acid Spanish variety rarely grown in California, and at Ibarra-Young it consistently produces fruit with sharp natural acidity — a key reason it is directed to rosé rather than red production.
